Butter Chicken - FAST!

Ingredients

Butter chicken

  • 25 grams Butter
  • 1 onion
  • 3 cloves of garlic
  • .5 teaspoon ground ginger
  • .5 teaspoon cinnamon
  • .5 teaspoon salt
  • .5 teaspoon turmeric
  • .25 teaspoon garam masala
  • .5 teaspoon chilli
  • 400 grams chicken, cubed
  • 100 grams tomato paste
  • 1 can evaporated milk
  • 2 teaspoons cornflour, for thickening.

Recipe's preparation

    Butter chicken
  1. Mix the spices together and add chicken meat and set aside.

    Chop onion and garlic for 5 seconds speed 7.

    Melt butter and saute onion and garlic for 2 mins at 100C speed 1.

    Add chicken and saute for 5 mins, 100C speed soft, REVERSE.

    Add tomato paste and evaporated milk with cornflour and simmer gently for 5 mins, 90C speed 1 REVERSE.

    Serve with rice and steamed veggies.

    You can cook rice first while steaming veggies (or even the chicken if you wish) in the varoma, then keep it warm in the thermoserver while cooking the butter chicken. 

    Or do the reverse... cook the butter chicken first then steam the rice and veggies. Either way works as long as you have a thermoserver!


    This recipe is very flexible - you can cut down on the tomato paste or boost it to your taste.
    You can use a longlife cream 250ml plus 1/2 cup of water if you feel like a more decadent experience... 
    And my best trick to extend it is to use less meat and cube pumpkin or potato very small, or even easier is to include a tin of chickpeas in the last step. Extends the recipe beautifully for very little effort.

    Butter chicken FAST! - I loved it but it was more a chicken curry than a butter chicken. Replaced the chilli powder with curry powder.  I reduced the tomato paste to 55ml and replaced the evaporated milk to 310ml coconut cream and chicken stock (90ml) up to 400ml in total. Only had about 320g of chicken and added one more teaspoon of cornflour at the end after it was cooked. Delish!!!

    We've had this meal sooo many times in our house and it never gets old. We recently changed it up and replaced the chicken with cubed haloumi cheese instead. It cuts the cooking time in half and cuts down our meat consumption. Just cube the haloumi cheese, heat for a few minutes in a frying pan and then add straight to the sauce once its cooked  tmrc_emoticons.)

    Made a few little changes but really enjoyed it. I did the following

    omitted the onion

    doubled the spices, quadrupled the garam marsala (to 2tspns)

    instead of evap milk I used coconut cream and water (420g in total)

    Yum!! Will be making again!

    This was recommended by friends and I enjoyed it tmrc_emoticons.) It wasn't so much butter chicken as an easy chicken curry but had plenty of flavour. I used thickened cream instead of evaporated milk. Next time I'll try coconut milk to decide which I like best.

    Family favourite!! I use a can of coconut cream in place of evaporated milk and cornflour. Perfect every time, I also add a bit extra garam masala and chilli powder for extra heat. More a yummy curry than butter chicken, thanks for a delicious recipe

    Fast and very easy dish. I swapped to coconut cream and doubled the spices and I still found it a bit bland, but my husband liked it. Like others here I cubed the chicken a bit bigger and used the soft spoon Gentle stir setting instead of speed 1 and I didn't have any issues with shredding and the chicken came out perfectly cooked. Will make again, but may add a few more spices to up the taste a bit.

    a really lovely dish and really easy. I used 270ml coconut milk can and only 50g of tomato paste. And used fresh turmeric as well. I steamed the rice in the basket with sweet potato cubed and broccoli in varoma while I cut the chicken up. Kids loved it with some papadums.

    So like a few others, I made the dish with the following amendments:

    - Used thigh not breast

    - Doubled all spices

    - Used coconut milk not evaporated milkIt may have been my buggering with the recipe, but it did not taste at all like butter chicken - but it WAS absolutely delicious! I'll absolutely be cooking it again tmrc_emoticons.) I've (re)labeled it in my collection as "Delicious Sweet Chicken Curry in a Hurry"!

    Mine turned out more like a generic curry rather than butter chicken,,,, was still nive, but not the taste I was after (I LOVE my butter chicken). I also would cut the chicken much bigger next time as it shredded.

    Yummy but definitely needs extra spices. I used coconut milk and added half a tin of chickpeas and a sweet potato. I added the sweet potato at the final step but I really should have added it when I added the tomato paste etc. because although I cut it very small it still took much longer than 5 mins to cook.

    Definitely easy to make.

    Highly recommend:

    1.  adding pumpkin and sweet potato to bring out the flavours. dice small and add early in the process to ensure cooked through

    2. adding peas and chickpeas 

    3. Using coconut milk as well as cream 

    4. dicing chicken a little thicker so it doesn't shred

    5. Icrease quantity of spices for sure

    Outstanding...I could not believe it would be cooked in the time stated, but it was perfect.  I needed to prepare a meal in a hurry, I had my hand in a jar of packaged sauce in the super market but just could not make myself buy it. Googled butter chicken and found this recipe, it took less time tto cook than the jar would have.

    As per some of the suggestions I added sweet potato and used coconut milk.  I also doubled the spices...bit warm for hubby but it was perfect for me. This recipe has gone straight to the top of my favourite list. I used chicke breast because that was what I had in the fridge, cut it a little bigger than suggested and had no shredding problems.  I used the lowest possible speed on reverse.

    Really nice recipe, easy to make too. I also used the coconut milk (200mls) instead of evaporative milk. I added some peas too. Would like to add potato next time. Can anyone tell me what stage i should add it in? Thinking the same time as the chicken but does it cook through enough ? Did you cook the rice in the basket while the butter chicken was cooking or separately?

    Super quick - love it!  I halved the tomato paste and used thickened cream (it needed to be used) and water and some pumpkin as suggested by others.  It was probably a little bland for our tastes (my husband is anglo-indian!) so i'll probably double the spice content next time.  Thanks for sharing  tmrc_emoticons.)

    this has become a regular favourite in our house.  So quick and easy - like a previous comment said, takes longer to mix the spices and cut the chicken than it does to cook.  Dinner on the table in under 30 mins, including cooking the rice.  Thanks so much
