Butter stuffing for Chicken Kiev-Parmigiana

Stuffing

  • 100 g TM butter, 1/3 amount made from recipe
  • 2 cloves garlic
  • 1 spring onion
  • few leaves basil,fresh
  • few leaves parsley, fresh
  • 1 teaspoon OilveOil
  • 1/4 teaspoon salt

Kiev-Parmigiana

  • 6 chicken breasts, (tenderloins removed)
  • 3 eggs, beat roughly
  • bread crumbs, made in TM
  • 6 slices bacon
  • tomato paste
  • Bbq sauce
  • grated cheese

Recipe's preparation

    Butter mixture
  1. Pre-heat oven 180c


    1. Make butter from 600mL cream, set aside (will use 1/3 amount)


    2. Place garlic, onion, basil and parsley into bowl, process 3secs speed 7


    3. Add butter, salt and oil, mix for 10secs speed 4


    Refrigerate butter mixture until set = easier to work with when stuffing Kiev's

  3. 4. Stuff 2+tablespoons butter into each chicken breast


    5. coat chicken in bread crumbs (ensure butter doesn't leak out)


    6. coat in bread crumbs and place on oven tray


    7. squeeze tomato paste and BBQ sauce along top of chicken kievs


    8. place a piece of bacon on each and sprinkle with cheese


    Place in oven and cook for 40-50mins or until chicken is cooked.
