Chicken & Almond Curry

Ingredients

4 portion(s)

  • 500 grams Thigh chicken fillets, skinless & diced
  • 4 cloves garlic
  • 2-3 cm ginger root
  • 1 red chilli, fresh, optional
  • 1/2 lemon, juiced
  • 50 grams toasted almond slivered/flaked, optional
  • 2 Brown Onions, halved, small
  • 1 cinnamon stick
  • 4 cardomom pods, crushed lightly
  • 3 whole cloves
  • 1 tsp cumin ground
  • 1 tsp coriander powder
  • 1 tsp tumeric powder
  • 50 grams whole almonds
  • 20 grams currents or sultanas
  • 300 grams natural yogurt
  • 125 grams Frozen baby peas
  • coriander leaves, fresh to serve
  • 1/2 tsp salt
  • 2 tbsp coconut oil

Recipe's preparation

    Adapted from 'Well Nourished' 23/07/14
  1. 1. Add whole almonds to Tm bowl and mill 10 sec/sp 9. Set aside.


     


    2. Chop garlic, ginger and chilli 5 sec/sp 7. Scrape down sides and add lemon juice. Mix 3 sec/sp 3.


     


    3. Add diced chicken thighs and mix 5sec/sp2 counter-clockwise operation. Set aside to marinade for up to 1 hour if time.


     


    4. Without washing bowl add onions and chop 3 sec/sp5. Scrap down sides and add oil, cook 5mins/varoma/sp2. Add cinnamon stick, cardamon pods and cloves cook 2mins/100/sp2/counter-clockwise operation. Then add cumin, coriander, tumeric and reserved almond meal. Cook 1min/100/sp2/counter-clockwise operation.


     


    5. Add chicken and salt to onion mixture and cook 2mins/100/sp2/counter-clockwise operation


     


    6. Add the yoghurt and dried fruit. Cook 20min/100/sp1/counter-clockwise operation.


    7. Add peas, cook for a further 5 mins/100/sp1/counter-clockwise operation.


     


    When finished transfer to thermoserver, add toasted almonds slivers/flakes and chopped coriander. Serve with basmati or cauliflower rice.

Tip

For a richer curry or dairy free, replace the yoghurt with coconut cream.

    Yum, this had heaps of flavour tmrc_emoticons.) I used 1 tsp of ground cinnamon, 1/8 tsp ground cloves, 1/2 tsp of ground cardamom pods instead of the whole spices.  Also a plain Greek yoghurt .  3/4 tsp of salt as previously suggested to add a bit more.  Plus 1 large red chilli, so not too spicy tmrc_emoticons.) very nice, thank you tmrc_emoticons.)

    Just lovely very tasty but not hot although I did omit the chilli (accidentally)!  I will definitely do this again.
