Chicken and Mushroom Family Pie

Ingredients

6 portion(s)

Filling

  • 2 cloves garlic, Peeled
  • 1 onion, Peeled and Halved
  • 30 grams oil
  • 1 tablespoon EDC Chicken Stock Concentrate
  • 100 grams water
  • 300 gram Carton Pure Cream
  • 3 tablespoons cornflour
  • 600 grams Chicen, Cubed into 2cm x 2cm
  • 250 grams mushrooms, Sliced
  • salt and pepper to taste

Pastry

  • 4 sheets ready rolled puff pastry, Or see EDC to make your own!
  • 30 grams melted butter

Recipe's preparation

    Filling
  1. Put Garlic and Onion in TM Bowl and Chop 3 seconds / speed 6.

    Scrape down sides of bowl

  2. Add Oil and Saute with MC OFF for 5 minutes / Varoma / Speed 1

  3. Add remaining Filling ingredients and cook 15 minutes / 100 degrees / Counter-clockwise operationGentle stir setting with MC OFF and basket on lid to prevent splatter

  4. Preparing Pie
  5. Preheat oven to 200*C

  6. Line large pie dish with 2 sheets of Puff Pastry

  7. Pour in Filling and top with the remaining puff pastry and brush with the melted butter

  8. Bake in oven for 20 minutes or until pastry is cooked and golden brown.

     

    Allow to sit for 10 minutes before slicing and serving.

Tip

This filling recipe is also great served ontop of home made fettuchini or gnocchi and topped with grated parmasen cheese

    I made this today and it was so quick and easy! I used already chopped up chicken to speed up the process and used thigh fillets. While it didn't look as pretty as the one in the picture, it tasted great. I only used 500g chicken, heaps of mushrooms and veggie stock cubes for ease. The filling was a little runny, but still tasted great. I'll definietly make it again and experiment with some different filings next time.

    Really tasty. I did one and a half times the recipe. Used pepper and salt plus some fresh thyme and Portobello mushrooms. Made enough for four adults, one child and three work lunches.

    Maybe not the healthiest pie but definitely tasty! Added carrots and celery to the onions. Reduced water to half but needed to add signficantly more cornflour to the mix at the end. Likely due to the water from the carrots/celery. Definitely will make again with minior tweaking.

    Superb recipe - looks gourmet served in a square casserole tray used two pre-prepared puff pastry sheets brushed with butter - looked a million dollars.   Took less than 10 minutes prep time, 20 minutes cooking time teamed with a with salad tmrc_emoticons.)

    My husband practically inhaled this and then told me he would pay money for it! Can't get better than that! I used the shortcrust pastry recipe from the BCB (would increase the quantity next time, there wasn't quite enough) I also used leftover chicken from the night before and just layered it cold into the pie tin and poured the mushroom sauce over the top. It was really perfect and super easy! Will definitely be making the rotations at our place tmrc_emoticons.)

    I added 3 diced rashers of bacon and found this to be delicious! For some reason I needed to cook the filling for  closer to 25 mins before the chicken was fully cooked. I only used 45g of water, but I would either reduce this further or maybe even leave it out altogether next time as I don't like my pie filling to be too runny. It's also worth noting that it's important to allow time for the filling to completely cool so that the pastry is crisp. Thanks for both the recipe and everyone's comments, we really enjoyed our meal!

    Just delicious. Didn't use in pie, had over pasta so needed it a little watery. If putting into a pie would certainly reduce water. Did need to add salt and pepper. I also added bacon and parsley at step 1. 

    By the next day the flavours were even better but I felt a little salty so wouldn't add salt next time.

    Great recipe thanks I added carrots, celery and mushrooms and reduced the amount of chicken slightly, found that the mixture was a bit runny at end of cooking so drained some of the sauce off before putting in the pie, next time I wil just reduced the amount if water slightly, whole family enjoyed it thanks  tmrc_emoticons.)

    This was really yummy. I added Bacon in with the onion and garlic just for something a bit extra.
