Chicken Chorizo & Chickpea Stew

Ingredients

  • 500 grams chicken breast, cut into chunks
  • 200 grams spanish chorizo, cut into slices
  • 2 tins diced tomatoes
  • 100 grams white wine
  • 1 small onion, cut into quarters
  • 1 clove clove garlic
  • 1 red chilli, optional
  • half red capsicum, sliced
  • 1 bunch coriander
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 200 grams water
  • salt & pepper, to taste
  • 40 grams olive oil
  • 1 tin chickpeas
  • 6

Recipe's preparation

  1.  

    Chop garlic 2-3 secs speed 10,

    Add onion 5 secs speed 5,scrape down sides

    Add oil & saute 3 mins 100 degrees

    Heat 2 tablespoon of oil in fry pan & brown edges of chopped chorizo to bring out flavour, pour chorizo & cooked oil into TM bowl

    Add , wine, paprika, cayenne pepper, cook 5 mins 100 deg Reverse Speed 1

    Add chicken, tomatoes,water, salt & pepper to taste, cook 10 min , 100 degrees, Reverse Soft Speed

    Add chopped capsicum, chickpeas & large handful of chopped coriander, cook 5 mins, 100 degrees , Reverse Soft Speed

    Serve with steamed rice and garnish to taste with some chopped coriander.

    Forgot the chickpeas. It still tasted good. I made hommous with the chickpeas I had (they were soaked and frozen so I needed to defrost then cook and I just couldn't wait). I had with rice and quinoa. I also didn't add any extra water and used 750g of diced (5 seconds/Speed 4) fresh tomatoes instead of canned. Also used the sauce to cook some extra chicken I had.

    Great recipe - heaps of flavour (especially if you brown the chorizo first) - I will definitely be adding to my regular line up! Next time I will thicken it up a little as was a tiny bit too liquid for my liking, but otherwise great.

    This was amazing, I did brown the chorizo off first, and the flavour went right through.  It has done my daughter and myself for two meals so far, with enough left for another large-ish portion tonight!  I didn't change anything, just made it as the recipe said.

    For anyone interested in Weight Watchers ProPoints, I calculated one serve (based on recipe serving 6), as 8 points.  I had it with 2/3 cup couscous which added another 4 points. 

    Great recipe, I will be making it again.

    tmrc_emoticons.DThanks for all the interest in this recipe. I have now updated it due to problems when first downloading. I would really recommend browning off the chorizo first to get a much fuller flavour. YUM !! 

    Also it is great with green peas instead of chickpeas as an alternative.
