Chicken Dumplings in Soup (Paleo, GAPS, Gluten/Dairy FREE)

Ingredients

The Dumpling Mix

  • 2 chicken breasts, roughly diced and partially frozen
  • 1 clove garlic
  • 1 sprig Tarragon, or other herb
  • 1 zucchini, roughly diced
  • 1 carrot, roughly diced
  • sea salt and pepper to taste
  • 1 egg white

The Soup

  • 1 l home made chicken stock
  • 1 zucchini, roughly diced
  • 1 carrot, roughly diced
  • 1 onion, roughly diced

Recipe's preparation

    Dumpling Mousse Mix
  1. In the bowl of your thrermomix combine the chicken, garlic and tarragon. Mince 10 secs./speed 10. 

  2. Add the zucchini and carrot, scrape down the chicken and mince 10 secs./speed 10 to make a fine paste with finely grated vegetables. 

  3. Add the seasoning and egg white and mix 5 secs./speed 4.

  4. Chill the mix until ready to cook. 

  5. NOTE: the first time I made these I did not add the zucchini and carrot to the mix, but when I made them again I found it bulked them out and also made them more tender. Use other vege like leek or pumpkin if you prefer. 

  6. Cooking your Meatballs
  7. Either in a pot on the stove (if your Thermomix is busy making you pumpkin custard at the time!) or in your Thermomix, bring the stock to a simmer with the vegetables. 

  8. Spoon or quenelle in spoonfulls of your chicken mousse mixture. Cook for 15 mins./100'C/Gentle stir setting

  9. Serve with a squeeze of lemon juice and drizzle of olive oil and extra fresh herbs if you like.

Tip

I love these pastry free dumplings because they are light and fresh. You can flavour them any way you like. A nice Asian Master Stock soup would be very good with meatballs that have onion and cabbage minced in and flavoured with Tamari, toastes sesame seed oil, ginger, garlic, mirin and corriander stalks (save the leaves to garnish along with sliced chilli).

 

Easily made with fish, just reduce the cooking time to 10 minutes.

    Yum! Tasty and easy to make tmrc_emoticons.)  There are just the two of us, so I stashed half of the chicken mix in the freezer for another day. I still made the full soup and added a tbs of veggie stock paste just for kicks tmrc_emoticons.). There was plenty of food for us both and left overs for lunch the next day, which we padded out with some angel hair guilt free noodles.

    Hubby loved it. Will make again. Thanks tmrc_emoticons.)
