Thai Green Curry Paste
- 1 tsp coriander seeds
- 1 tsp cumin seeds
- 1 tsp black peppercorns
- 2 shallots
- 100 grams garlic, approximately 2 whole garlics
- 80 grams lemongrass (white part only), approximately 4 stems
- 1 bunch coriander, fresh
- 3 cm pieces fresh galangal, (or use ginger)
- 1 lime (zest and juice of)
- .5 tsp ground nutmeg
- 2 tbsp tamari or soy sauce
- 1 tsp salt
Chicken Laksa
- 1 leek
- 2 --- garlic cloves
- 3 cm ginger
- bunch coriander, roots and stems (reserve leaves for garnish)
- 2 tbsp Thai Green Curry Paste, recipe above.
- 500 gram Chicken thigh fillets, cut into 5cm pieces
- 20 gram olive oil
- 400 gram coconut milk
- 1 tbsp Vege Stock Concentrate, recipe from EDC
- 500 grams water
- 1 bunch bok choy, pak choy or baby spinach
- 400 grams noodles
- 2 tbsp tamari or soy sauce

Recipe's preparation
1. Dry roast the coriander and cumin seeds for 5 mins, 100 degrees, speed 1.
2. add the peppercorns and grind, speed 9 for 1 minute
3. Add the remaining ingredients, and either turbo or chop on speed 9, scraping downn the bowl a few times.
1. Chop the garlic and ginger with coriander roots and stems for 3 seconds speed 7.
2. Add leek (sliced in rounds). Add oil and saute for 2 mins, 100degrees, "Counter-clockwise operation" "Gentle stir setting"
3. Add chicken and thai green paste and suate a further 3 mins, 100degrees "Counter-clockwise operation" "Gentle stir setting"
4. Add coconut milk, vege stock, water and Tamari / soy sauce and cook for 18 mins, 100 degrees "Counter-clockwise operation" speed 1.
5. whilst cooking, prepare your noodles as per the packet instructions (soak in boiling water etc) and then drain and place in thermoserver.
6. place the greens into the thermoserver with the noodles.
7. top the noodles and greens with the laksa sauce and garnish with the fresh coriander leaves.

This was a winner at our
This was a winner at our house. The paste was amazing and tasted just like a thai red/green paste just without the chilli. I didn't have enough lemongrass so I just added more kaffa lime leaves and I tweaked a few things as per a different thai green paste recipe but not by much. I also froze the paste for future recipies.
Also, I wasn't really a soup (which is what I expected) but that worked better for us with 3 kids 4yrs and under. I added more veg and chopped some chilli and sprinkled on top for hubby and my. Perfect!!

I didn;t make the paste, I used 4 tbsp of bought thai green paste and it was absolutely delicious!

I've owned my thermomix for just under a month, and have already made this recipe 3 times! Definitely a big winner in our house.
Like the above commenter said though, I think there's far too much garlic in the recipe. I used half the amount and it was still quite garlicky! I also substituted the pak choi/spinach with broccoli, the leeks with onions and served with rice instead of noodles. Oh and I added half a fresh chilli to the paste. Delish

Delicious recipe! We added about a table spoon of fish sauce with the Veg Stock/Water and also some bean sprouts and thinly sliced chilli once plated. Could do with a little more heat so might add some chilli to the paste next time. Very authentic tasting! Highly recommend!

Cooked this for dinner last night it was yummy, I didn't make the paste, I had some Ayam Malasian laksa paste in the fridge.....

This was amazing but I did tweak it a bit.
I used homemade chicken stock with a splash of fish sauce instead of the water and EDC veg stock.
I added three finely sliced kafir lime leaves about half way through the cooking process.
Instead of chicken I added fish balls and prawns at about the fifteen minute mark..seafood laksa delicious!
