Clean Thai Green Curry in a Hurry (Chicken)

Ingredients

4 portion(s)

  • 70 grams cashew nuts
  • 3 sprigs spring onions
  • 3-4 pieces large fresh green chilli
  • 3 cloves fresh garlic peeled
  • 1 stalk lemon grass stem, cut into 10cm pieces
  • 2-3 leaves Kaffir lime leaves
  • 400 grams coconut milk
  • 4 leaves fresh sweet basil, optional
  • 4 tablespoons fish sauce
  • 1/2 tablespoon honey
  • 1-2 portions red capsicum, sliced
  • 750 grams chicken breast fillets, skinless, sliced half cm thick
  • 30 grams coconut oil

Recipe's preparation

  1. Place nuts in the TM bowl and mill for 5 sec / speed 9. Set aside

  2. Chop spring onions, chili, garlic, lemon grass and kaffir lime leaves 10 sec / speed 7

  3. Add oil and saute 2 min / varoma temp / speed softGentle stir setting

  4. Add coconut milk. Cook 4 min / varoma temp / speed 1

  5. Slowly blend 20 sec / speed 9 for a smoother sauce. (You must remember to turn the dial slowly). Once you get to speed 9 then count down 20 seconds, this will ensure a smooth sauce)

  6. Add sliced chicken pieces, cook 8 min / varoma temp / reverse / speed softGentle stir setting

  7. Add fish sauce, fresh basil, honey and ground nuts (less nuts if you want a thinner sauce).
    Add vegetables at this stage for a crisper texture. Stir around a little with your spatula so the vegetables are covered in sauce.

    Cook 2 mins / varoma temp / reverse / speed softGentle stir setting

    Garnish with Coriander or slices of chilli.

Tip

You can add any type of vegetable you like. I like to add them in the last 2 minutes of cooking time as it keeps the vegetables crisp and they are not overcooked. I keep the seeds from the green chillis in the sauce as they are not as hot as what you would think. You can also change chicken to seafood. Happy cooking!

    I absolutely love how easy this is to make, and the flavours are so authentic. Family favourite and I add whatever veggies need using up in the fridge!

    This was a great curry! I made it with prawns and tofu and added snow peas , asparagus and English spinach. I used two large green chillies and it had a nice bit of heat to it.

    i substituted the basil for lots of fresh coriander.

    The left over sauce was frozen and I will use it to make two modest serves of fish curry with baby sweet corn and English spinach. Okra would be really good too.

    Will be making this again for sure!

    what an awesome recipe. the flavours are amazing... I used 4 homegrown big jalopenos for a mouth burning KICK... Everyone loved it. Everyone also felt asthough they were on fire.. I cant wait to make this again.. Thanks for a 10/10 recipe tmrc_emoticons.)

    I added half the fish sauce, any more and I think it might have been a bit too fishy for us. 

    Used red capsicum, but next time I think we will use a bunch of different veggies as per the suggestions here.  And there WILL be a next time - this recipe will be on high rotation!  Thank you!

    Enjoyed this recipe. Thought it could have done with some extra heat however that's easy fixed next time. Really liked how the cashews thicken up the sauce. I went with previous suggestions and used 100g of cashews and it worked really well. Also added in the red capsicum and some zucchini about 6 mins before the end. Tasted great!
