Corned Beef with Mustard & Parsley Sauce

Ingredients

Mustard & Parsley Sauce

  • 10 g Flat Leaf Italian Parsley, (handful)
  • 50 g Butter, cubed
  • 25 g Flour, Plain
  • 420g g Milk, Full Cream
  • 2 tablespoon seeded mustard
  • salt & pepper, to taste

Corned Beef

  • 1200 g corned beef
  • 1.5 litres water, boiling
  • 5 cloves, whole
  • 3 bay leaves
  • 90 g apple cider vinegar
  • pepper, to taste

Vegetables

  • potatoes/sweet potatoes, peeled and cubed
  • carrots, peeled and chopped
  • Corn
  • broccoli florets

      TM 5
      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Mustard & Parsley Sauce
  1. Place the parsley into the TM bowl and chop for 5 sec / speed 7. Remove from bowl and set aside. There is no need to wash the bowl.

    Put the butter and flour into the TM bowl and chop for 4 sec / speed 5. Cook for 5 mins / Varoma / speed 2.

    Add the milk, seeded mustard, parsley, and salt & pepper to taste and cook for 8 mins / 100C / speed 3.

    Pour sauce into a microwave-safe jug and place glad wrap over the surface of the sauce to ensure that a skin does not form on top. Set the jug aside and clean the TM bowl.

  3. Remove the beef from the packaging and place in the Varoma dish and rinse well under cold water. Dry beef with paper towels, lift it out and spray the dish with oil to make sure the meat does not stick. Place the beef back into the oiled Varoma dish. 

    Add the water, cloves, bay leaves, vinegar & pepper to the TM bowl and place the Varoma on top. 

    Cook for 1.5hrs / Varoma / speed 2.

  5. After 1.5 hours add your potatoes, sweet potatoes and carrots to the varoma around the corned beef and in the basket if you are cooking for a crowd.

    Check the water level in the TM bowl and refill with boiling water to the 1 litre mark if required.

    Place the basket in the bowl and the Varoma back on top and cook for a further 30 mins / Varoma / speed 2.

    Add the corn and broccoli with 15 mins to go.

    Check the vegetables, if they are still firm cook for a further 5-10 minutes, taking care not to overcook the broccoli.

    Gently reheat Parsley Sauce and serve with corned beef and vegetables.

This sauce freezes well, just stir well after reheating.

    Amazing amazing did not do the sauce as I always do the edmonds one on stove top. Made mash in another pot and threw broccoli corn Cobb carrots and kumara in at the 15min to go mark. Amazing!! So moist

    All can say is WOW! I will never cook silverside any other way again. The source is Devine, the vegies are perfection. We do our mash potato seperately as cooking potato in the basked takes on the vinegar favour.

    Delicious. I had some corned beef that needed to be used so I cooked the meat sans vegetables and sauce to heat up the following day. The sauce is really delicious and a perfect accompaniment to the salty beef, there was a bit too much so I ended up freezing some. Definitely keeping this recipe saved for when I'm sick of making traditional roast chook/pork/lamb. Thank you.

    I searched for a parsley sauce to go with my pan fried salmon and this recipe popped up...one word, delicious! The recipe halved perfectly with plenty of sauce to pour onto two salmon pieces our mashed potato and veggies. Only one thing, the recipe doesn't say when to add back in the parsley so I added it in with the milk, I guess I must have got it right as it was yummy, I also added a spring onion in with the parsley when I chopped it

    Our meat was 1325g and was well cooked at 2 hours. Family thoroughly enjoyed the meat flavour, juiciness & texture of meat, as well as commenting on the flavoursome sauce. 

    We enjoyed meat with sweet potato & carrot cooked in varoma, alongside a green salad.

    Easiest way to make this meal - Hubby made it for me as his first meal in the Thermomix.  It was a great success and tasty!  I also did think that I would prefer the white sauce, but I did enjoy it.  Personally for my taste I would take the mustard out, but hubby likes mustard and usually makes a mustard sauce with corned beef so this was a great compromise!

    Our piece of beef was a fair bit smaller and only needed about 1.5 hours, but it took us a bit to work out what we thought would be right.  I think it was between 7-800 grams.  Potatoes and carrots in at 30 mins to go and Broccoli in with 10 minutes to go.

    Awesome recipe! Silverside is one of my husband's favourite meals so I've been making this for many years by simmering on the stovetop. I've only had my TM5 a couple of weeks so gave your recipe a go. I will always do it this way from now on. The meat was so tender, moist and tasty and the veges much tastier too. The sauce was dead easy but my husband wasn't keen on the mustard flavour so I'll just leave it out next time. Thanks.
