Crusty Chicken Casserole

Ingredients

4 portion(s)

Casserole

  • 1 onion, white
  • 2 celery stalks, chopped in 2cm pieces
  • 3 bacon rashers, chopped into 2 or 3 pieces
  • 400 g chicken breasts, diced in 2 - 3cm cubes
  • 5 g olive oil
  • 100 g frozen peas
  • 100 g frozen corn kernels
  • 1 cans chicken soup, condensed
  • 300 g sour cream
  • 30 g cheese
  • Salt & Pepper, to taste
  • 1 tablespoons chicken stock paste, optional

Cheese Batter

  • 90 g cheese
  • 1/2 Capsicum, red pepper
  • 130 g zuchinni, courgette
  • 140 g flour, self-raising
  • 2 eggs
  • 110 g Milk

Recipe's preparation

  1. Turn on oven to 160c.
  2. Casserole
  3. Grate casserole cheese 4 sec / spd 6 and set aside.
    Place Onion, Celery and bacon in TM. 3 sec / spd 5
    Add diced chicken and olive oil. 7 min / varoma / spd 1Counter-clockwise operation
    Break any large pices of chicken up with spatula.
    Add peas, corn, cheese, soup, sour cream, Salt & Pepper and stock paste if using.
    Mix with spatula and then 20sec / spd 1 /Counter-clockwise operation
    Place into large greased casserole dish
  4. Cheese Batter
  5. Grate cheese - 4 sec / spd 6
    Add chopped capsicum and zuchinni
    Mix 5 sec / spd 4
    Add SR Flour, Eggs, and milk
    Mix 4 sec / spd 4Counter-clockwise operation
    Spread over casserole
    Cook 40 mins till golden
