Tip

When cooking curry with the butterfly, please note your butterfly may become discoloured.  I find using the butterfly prevents shredding of the chicken.

Delicious, quick and easy. Will definitely cook regularly. I didn't have a fresh tomato so used semi-dried.. OMG, extra flavour hit. Thank you for sharing this recipe 😀

A delicious & simple risotto! Plenty of taste, colour and variety. I used chicken thighs and coconut milk but everything else the same. Turned out well, and such an easy dinner, all in one!

Thank you for a great recipe! 🙂

Not sure if I did something wrong but I needed to do a lot of tweaking. Needed at least double the amount of stock paste, more cooking time (rice was still a bit crunchy and carrots needed a lot longer) and there was too much in the bowl to cook evenly. I like the concept of this dish but the recipe didn’t work well for me.

Delicious..we added at least a teaspoon of hot chilli flakes and an extra tablespoon of curry powder. Also did not add 300ml of water just 300ml of milk as this was too much for my jug.

I replaced the chicken with cauliflower for a vegetarian version. Very tasty. I would lessen the curry powder a little next time as kids thought it a bit spicy.

    Submitted by saucysandy on 8. August 2014 - 13:24.

The Fam bam love this recipe. I found however though, when we have left over snags from a sausage sizzle, and mix them through the rissotto at the end, it is even better! Best ever curried snags and rice. don't get me wrong, it is great with the chicken, but my family loves it with sausages tmrc_emoticons.)

Made this last night. Carrot & capsicum (step 2) did need a bit of extra time. I didn't used the butterfly as I was quite happy for the chicken to be shredded.

it was great, will definitely be making again!

Yeah I have been meaning to do a bit of tweaking!

I would assume the the chicken would shred a little bit too much without using the butterfly! It's a shame when it turns green, but it still does the same job tmrc_emoticons.)

    Glad you enjoyed it!
