Easy Chicken & Asparagus Risotto

Ingredients

  • 20 g Parmesan cheese, cubed
  • 3-4 sprigs basil leaves, fresh
  • 1 brown onion, peeled and quartered, peeled and quartered
  • 1 clove garlic
  • 30 g oil
  • 500 g water
  • 120 g white wine, dry
  • 3 tablespoon vegetable stock
  • 300 g short grain rice
  • 500 g chicken breast fillets, skin on, diced 2cm cubed
  • 1 bunch asparagus, green, cut into 4cm lengths
  • 1 teaspoon lime rind, finely grated
  • 2 teaspoons lime juice

Recipe's preparation

  1. Place Parmesan into TM bowl and chop for 10 seconds on speed 9.  Add basil leaves into TM bowl and chop for 3 - 5 seconds on speed 7.   Set aside.

  2. Place onion and garlic in TM bowl and chop for 5 - 7 seconds on speed 7 (ensure you are happy with result). Scrap down sides. Add oil and sauté for 2 minutes, 100 degrees on speed 1.

  3. Insert butterfly.   Add water, wine, veg stock, rice and chicken and cook for 14 minutes at 100 degrees on reverseCounter-clockwise operation speed softGentle stir setting.

  4. Add asparagus and cook for 2 mins at 100 degrees on reverseCounter-clockwise operation speed softGentle stir setting

  5. Pour into Thermoserve and stir through lime rind, lime juice and basil parmesan then allow to rest for 5 minutes before serving.

    This was not a hit in our house... I used arborio rice and cooked it for the time directed. I noted as per others that it was a little undercooked but hoped that it would 'finish off' in the Thermoserver but it didn't so I was left with slightly undercooked rice and a very unhappy family. I had high hopes for this but the flavours weren't impressive enough to make up for crunchy rice.

    This was so easy and full of flavour. Big hit with all the family. Used Aborio rice and let stand for about 8minutes. Used the 3 tablespoons of my vegetable paste. Added black pepper and extra Parmesan to serve. Definitely a winner.

  • I just got my Thermomix

    I just got my Thermomix yesterday and this is my first meal that I've made. It turned out fabulously and whilst only my two year old son was here tonight, we both loved it. I just used up some leftover roast chicken so put it in with the asparagus and I added a little kale and spinach. Delicious!

    My husband made this tonight. Easy recipe. I felt that the texture was good. Flavours were balanced however tasted pretty underwhelming. Edible but nothing to write home about.

    Made using arborio rice and left out the chicken for a vego lunch option at my house with the Mother's Club. Really impressive and kept warm in the thermo server long enough for second helpings to be enjoyed. I think it was ready in half an hour. An excellent recipe.

    I also made with Arborio and let sit a bit longer And it was perfect. I didn't have any lime but it was still delicious. I also added parley to the basil cheese. Pretty much 30 from start to finish. Perfect.

    I made this with arborio, and the rice was stil crunchy after cooking, but was perfect after resting for 10 mins in the thermoserver. Beautiful flavours.

    Yummo!  Made this for dinner last night and it was delicious!  I'm dairy free so left out the parmisan, also I added the lime juice but left out the rind which I'm glad I did as I think it would have been too overpowering for me.  My partner complained about the lime juice but I think it was perfecto!   Big Smile

    The omnivores in my family tell me the favours are delicious but its a little claggy compared to the EDC risotto I normally make. I think it was perfect at the end of cooking prior to adding the asparagus and putting it in the thermoserver took it too far. Because I always serve risotto from the thermoserver I would be inclined to only cook for 14 or so minutes next time. Thanks for sharing a great recipe tmrc_emoticons.)
