FODMAP Friendly Creamy Beef Curry

Ingredients

6 portion(s)

Casserole

  • 1kg cubed chuck steak, or gravy beef
  • 50 grams Butter or Ghee
  • 1 Red Chilli (seeds removed), or 2 if you want extra kick
  • Fresh chives for your tastebuds, I normally have about 10 pieces
  • 2 heaped teaspoons yellow mustard seeds
  • 2 cm fresh ginger
  • 3 tablespoons curry powder
  • 1 tablespoon ground tumeric
  • 1 tablespoon white vinegar
  • 400 gram Tin crushed tomatoes
  • 2 tablespoons white sugar, (optional)
  • 150 g Lactose free Cream, or normal cream if tolerated
  • juice of half a lemon
  • 2 tablespoons thermomix vegetable stock, (made without onions and garlic)

Recipe's preparation

    Adapted from Toxy's Creamy Beef Curry
  1. Place ginger, chilli and chives into the bowl and chop 4 seconds/speed 7.

     

    Scrape down sides of the bowl and add the butter. Saute for 3 minutes/Varoma/ speed 1/MC removed.

     

    Add curry powder, tumeric and mustard seeds and saute 2 mins/Varoma/speed 1/MC removed.

     

    Add sugar and vinegar and mix 5 seconds/speed 3.

     

    Add cubed beef, tinned tomatoes, TM stock, and cook 30 minutes/100 degrees/REVERSE/speed soft.

     

    Add cream and cook for another 30-40 minutes (cube size depending)/100 degrees/REVERSE/speed soft.

     

    When finished and cooked to the tenderness of your liking, add extra salt and pepper to taste, pour into thermo-server and make your rice/mash and veggies to serve.

     

    Just before serving, squeeze half juice of a lemon through.

Tip

Great meal to freeze. You can also make with half the meat 500-600 grams if you want it extra saucy

    I used @bubg's alterations of 2T curry powder, coconut cream instead of cream, and adding veggies at that step in the recipe. Kept a bit of the chilli in (1/4tsp). Loved the results! Great curry and reheated well for lunches.

    Not a big fan of this one I'm afraid. I only included 1.5 tbsp of curry powder and even at that was overpowering. The beef did come out nice and tender (I cooked for the maximum time). Also found it needed thickening somewhat; I used potato mash which did add some extra flavour as well.

    yummy! even my fussy daughter liked it! I didn't have fresh ginger and chillies, so i just added ginger powder and chilli flakes. Added zuccini and brocolli towards the end. My daughter used to suffer from Fructose Malabsorption years ago, even with the zucchini and broc, it still would be considered suitable for those with FM. Wish we had this recipe as well as a thermomix all those years ago! Thanks for sharing. tmrc_emoticons.-)

    This curry is really delicious. I used about 800g rump steak, left out the chilli and reduced the curry powder to 2T to cater for our kids and it still tasted great. Instead of adding cream I added a tin of coconut cream and veggies (zucchini, corn, sweet potato, carrot, chick peas, brocolli - so it wasn't a FODMAP curry for us). At this step I also transferred the ingredients to the slow cooker to simmer away for the afternoon. I can see myself making this one regularly throughout winter - it's a winner!     So good!! Will definitely make again!! Beef was so tender! I did sub chives for whole brown onion, chilli with chilli powder, fresh ginger with powdered, mustard seeds with whole grain mustard from jar. Loved this recipe!
