Fresh Tumeric Curry

Ground Coriander

  • 1/2 tsp Ground Coriander
  • 1/2 tsp cumin
  • 1/4 tsp ground cloves, Optional
  • 1/4 tsp cinnamon
  • 1/4 tsp ground cardamom
  • 1/2 tsp freshly ground pepper
  • 1/4-1/2 tsp cayenne
  • 1 tbsp fresh ginger
  • 4 cloves garlic
  • 1 piece Fresh Turmeric
  • 1 brown onion
  • 40g olive oil
  • 1 Vine Ripened Tomato
  • 800g chicken thighs, cut into thirds
  • 1 tbsp chicken stock paste
  • 1 can coconut milk, Ayam
  • 200g water
  • handful of fresh basil leaves
  • 6 pieces Broccolini or broccoli
  • 1 bunch asparagus
  • lime wedges to serve

Recipe's preparation

    Preparation
  1. In a small bowl combine dried spices and set aside.


     

  2. Mince garlic, fresh ginger and fresh turmeric on speed 7 for 3 seconds.


     

  3. Add onion and chop at speed 5 for 3 seconds.


     

  4. Add olive oil and saute for 3 minutes at 100C, speed 1.


     

  5. Add and chop on speed 5 for 5 seconds.


     

  6. Insert butterfly and add remaining ingredients, arranging chicken around butterfly and making sure the coconut milk and water doesn't exceed the 2-litre mark on bowl. 


     

  7. Add asparagus and broccoli to the Varoma tray and position in place.


     

  8. Cook at 100C for 30 minutes on counter-clockwise operation, speed Gentle stir setting


     

  9. Stir through basil leaves and serve hot with cooked rice or steamed broccoli and lime wedges.

Tip

Great to use with left over chicken pieces.  Cook recipe as per instructions without chicken.  Strip left over chicken into fine pieces and reserve.  Stir chicken through cooked sauce and serve hot.
