Pasta Base
- 250 grams Macaroni Pasta
- 1200 grams Boiling water, from your kettle
- 60 grams parmesan
Meat Sauce
- 2 tablespoons olive oil
- 2 med brown onions, halved
- 750 grams Beef mince
- 425 grams can of tomatoes
- 130 grams tomato paste
- 165 grams water
- 95 grams dry white wine
- 1 bay leaf
- 1/2 teaspoon cinnamon
- salt and pepper to taste
White Sauce
- 90 grams Butter
- 165 grams plain flour
- 1155 grams Milk
- 80 grams parmesan
- 2 egg yolks

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
1.Chop Parmesan 10 sec/ Speed 9 Set aside
2. Clean & dry TM bowl. place pasta and boiling water into the TM bowl
3. Cook 6 min/ 100 °/ Speed 2 "Counter-clockwise operation" Pasta shld be Al Dente. Drain through simmering basket
4. Add 2 eggs & the parmesan that was set aside. Mix 10 sec/ Speed 2/"Counter-clockwise operation"
5. Pour into ovenproof dish (2.5 litre/10 cup capacity)
Preheat Oven 200°
1. Add onions. chop 5 sec/ speed 5, scrape down sides and repeat
2. Add olive oil & saute 2 min/ Varoma/Speed 1
3. Add mince cook 7 min/ Varoma/ "Gentle stir setting" /"Counter-clockwise operation"
4. Add remaining ingredients cook 8 min / 100° / "Counter-clockwise operation" / Speed 2
5. Remove bay leaf and then slowly pour over Pasta Base
1. Melt butter 2 min/100 °/ Speed 1
2. Add flour & cook 1 min/ 100 °/ Speed 1
3. Add milk, parmesan & egg yolks, scrape flour mixture from bottom through milk and mix 2 sec/Speed 5 . Make sure MC on lid
4. Cook 8 min/ 100 °/ Speed 2
5. Check if all flour combined by scraping again with spatula, then briefly mix again 2 sec/ speed 5
6. Pour over macaroni and meat
Bake in oven for 40-45 minutes or until golden brown
Stand 10 minutes before serving

Tip
To speed up recipe you could cook the macaroni on the stovetop while you prepare the meat & cheese sauce.
Don't forget you want the macaroni Al dente
Pasticcio is tastier if prepared a day ahead.

This was a great family dinner. It would be a great dinner for kids. I cooked the pasta on the stove while cooking the meat. I didn't add the wine because I had fully cooked the pasta & thought it wouldn't absorb all the liquid that was already in the mince.
I loved it but husband thought it was a bit bland. We usually eat spicy food with big flavours. Next time I cook this I will add fresh garlic & basil to add more flavour.
This makes a lot & it would easily feed 8 adults with a salad or veg. I have some for the freezer which is great.

Tasty recipe, thank you. I doubled the recipe and it fed three adults, two teens and made enough for work lunches x3. I cooked the pasta in a separate pot.

Loved this recipe, I made a few changes as didn’t add water, wine or bay leaf to the mince but added 1 teaspoon of crushed garlic and some oregano to the mince mixture was nice and thick so it all stayed together when serving.
Will definitely be making this again 😁

I didn't find this recipe very good. You definitely need to leave the water out of the mince. Easier to just cook the macaroni on the stove top while you are making the meat sauce. And I just used the Bechemel Sauce recipe that is on the Thermomix Chip which only uses half the amount of milk.

i loved this it was yummy. I found the recipe to b missing a few things like eggs for the pasta base and to combine the parmesan and eggs with the pasta. There was certainly no shortage of sauces this meal would feed around 8 if there was more pasta cooked for the base.

This is a great recipe. I tried it with gluten free pasta and it was also delicious. Make sure you use good quality pasta and cook it separately. I also added a layer of garlic salt between the meat sauce and the white sauce. If you like garlic, give this a go. Cheers. TDG
Definitely tastes the best
Definitely tastes the best the day after when all the flavours are nicely combined. As per previous comments I used half of the white sauce and even that was still plenty and also noticed 2 eggs missing in ingredients list for pasta base thank you for the recipe!

Don't forget to grate your parmesen cheese for the white sauce section before you add the buttter and flour. This wasn't stated in the method and I as alreadyhalf way through making it when i realized I hadn't grated the parmesen.

Mince sauce was far too runny would also omit the water.
Also ended up with 3 times the amount of white sauce required so would definitely half that next time.
Would also cook pasta on stove as its a lengthy recipe.
We really liked this recipe.
We really liked this recipe. I strained the liquid out of the jug after cooking the mince, and then found that I had to strain more out when the mince/tomato mixture was ready to be poured on to the pasta as it was too runny. Next time I'll still strain the juices from the cooked mince, but I won't add the water to the mince/tomato mixture. I also found that I only needed about half of the white sauce that I made. Maybe my baking dish was smaller than it was supposed to be?
It turned out perfectly in the end, though, and like the recipe says - it was even better the next day. We'll definitely be enjoying this recipe regularly.
** Also, the two eggs required for the pasta base are missing from the 'pasta base' section of the ingredients list.
