Hakka Chinese Red Pork

Ingredients

Pork:

  • 700 g Pork Belly or Pork Leg Roast, diced into 2cm lengths
  • 4
  • 4 cloves garlic
  • 20 g peanut oil, use less if pork has alot of fat
  • 1 teaspoon Fermented red rice, found in asian shops, need to grind into a powder before use in recipe
  • 0.5 teaspoon salt
  • 0.5 tablespoon soy sauce
  • 1 teaspoon chicken bullion, found in asian shops
  • 1 shallot, finely sliced

Recipe's preparation

    To make pork:
  1. Chop garlic 3 seconds, speed 5

  2. Add oil and saute 3 minutes, varoma, speed 1

  3. Add pork and fry (MC OFF) 15 minutes, varoma, reverse, speed soft

     

  4. Add salt, chicken bullion, fermented red rice powder, soy sauce and 1/4 cup water. Cook (MC on) 10 mins, varoma, reverse, speed soft.

  5. Add shallots and mix 10 seconds, reverse, speed 1.

Tip

Fermented red rice is the 'secret ingredient' in this dish. It can only be found in Asian shops. The chinese name is 'hong ju'. Ask the staff if you are not sure, most are very helpful.
