Healthy Butter Chicken

Butter Chicken

  • 1 tablespoon Light Oliver Oil
  • 1 piece brown onion
  • 3 cloves garlic
  • 1 heaped tsp ground cinnamon
  • 2 heaped tsp garam masala
  • 1 heaped tsp Ground Coriander
  • 1 heaped tsp smoked paprika
  • 1 heaped tsp cumin
  • 1 heaped tsp tumeric
  • 400 g butternut pumpkin
  • 0.5 litre chicken stock, or vegetable stock
  • 140 g tomato paste
  • 600 g chicken breast, Cut into 4cm pieces
  • 200 g Low fat Greek Yoghurt
  • 1.5 heaped tsp cornflour

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
      1. Add onion, garlic and ginger - chop 5 seconds / Speed 7 - scrape down sides
      2. Add oil and cook for 4 min / 100 deg.C / Speed 1
      3. Add spices - cook for 1 min / 100 deg.C / Speed 3
      4. Add roughly chopped pumpkin - chop 5 seconds / Speed 7 - scrape down sides
      5. Add stock and tomato past - cook for 8 minutes / 90 deg.C / Speed 2
      6. Puree mixture - 10 seconds / Speed 9 (increased gradually)
      7. Add chicken - cook for 8 minutes / 90 deg.C / Reverse Speed 2.5
    • Spoon 2 tbs of the sauce into a heatproof bowl. Whisk in yoghurt and cornflour until smooth and combined. 
    • Add mixture - cook for 7 minutes / 80 deg.C / Reverse Speed 2
    • Serve with Basmati rice

    I love the recipe. I've adapted it slightly see below - and I reduce the amount of chicken and add some sweet potato

    I love love love this recipe. It ended up very runny and I have made a note to myself to Gentle stir setting stir for the last part of the recipe in reverse instead if speed 2.

    I should have read the comments before I made it! Next time will also reduce the speed to avoid shredded chicken. Was my first chicken dish in thermi (had it less than a week) so still learning all the tricks! Made naan as well. Great recipe- really enjoyed it. For next time, how much ginger do you use?

    Thank you for this recipe, I really enjoyed it! My 2yo asked for more! I left it on speed 1 as per comments below and had minimal shredding of chicken. You may want to add ginger to your ingredients list as it seems to be missing. Great flavour my waistline thanks you!

    I ended up with shredded chicken too, but it was still yummy. Only problem I had was ginger is not listed in the ingredients and I didnt look through the recipe when shopping.... so I made it without ginger.

    This was a MASSIVE hit!! I had 6 adults for dinner and I made two batches....luckily I did cos the first one the chicken was shredded so the second batch I used speed 1 and mixed the two together. It was perfect! I also served it with Cauliflower rice instead of Basmati which made it even healthier! Thanks so much for posting this! Big Smile

    Fantastic recipe!  Just made it tonight and was very impressed with the flavour and consistency despite the lack of "unhealthy" ingredients.  The chicken does get a bit hacked up, but I found this to be a bonus with two small kids, who sometimes find chewing a bit laborious.  Definite winner. Thanks for posting.

    Delicious and healthy recipe. Only problem I had was the chicken became so tender that it was pretty much shredded after the cooking time. It was still super tasty though and I will make again. Thanks for sharing.
