Hidden Vegetable Chicken Parmigiana bites

Ingredients

Sauce topping

  • 300 grams fresh tomatoes
  • 1 clove garlic
  • 1/2 onion
  • 2 sprigs basil
  • 100 grams roasted capsicum
  • 40 grams Tomato Paste.
  • 10 grams olive oil

Chicken Bites

  • 1/2 onion
  • 1 carrot
  • 1/2 red capsicum
  • 1 egg
  • 1 clove garlic
  • 1 --- panko bread crumbs, enough for rolling
  • 800 grams chicken, cut into cubes
  • salt and pepper to taste

Topping

  • 150 grams ham, Thinly sliced
  • 150 grams cheese, grated

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Chicken Bites.

    1. Preheat the oven to 180 degrees

    2. Place onion, carrot, garlic and capsicum on speed 7 for 10 seconds, scrap down and repeat if needed. 

    3. Add Chicken and egg and turbo on 2sec 3-5 times

    4. Roll into balls (approx 1 heaped tablespoon) and roll on Panko bread crumbs, mixture will be fairly wet but will keep shape. 

    Sauce

    1. Place Onion and Garlic on speed 7 2sec, scrap down and repeat. 

    2. Add Oil and saute 3 mins varoma speed 1.

    3. Add tomatoes, Basil and Roasted capsicum and tomato paste and mix on speed 7 10 seconds. Cook for 15mins 100 degrees speed 1.

    Topping.

    Place ham on Chicken bites followed by approximatly 1 tablespoon of sauce topping then sprinkle on cheese.

    Place in oven for 40 mins. Less time would be required for smaller bites

    Made these tonight and substituted the garlic & onion with half a leek, the flavours are fantastic, the tomatoe sauce is the best I've ever made with minimal ingredients (again without onion & garlic).  A definite favourite and great use of leftover chicken fillets and very quick and easy. Will make these again! Thank you for this reciepe
