Hidden Veggie Meatball and Risoni

Ingredients

6 portion(s)

Meatballs

  • 2 cloves garlic
  • 1 onion, halved
  • 1 sprig rosemary
  • 2 sprigs basil
  • 500 grams mince
  • 20 grams Quinoa flakes, you could use breadcrumbs instead
  • 1 egg

Sauce

  • 2 cloves garlic
  • 1 onion, halved
  • 2 sprigs basil
  • 2 sprigs parsley
  • 1 carrot, roughly chopped
  • 1 zucchini, roughly chopped
  • 1 celery stalk, leaves includes, roughly chopped
  • 1 --- tomato, halved, or a handful of cherry tomatoes
  • 800 grams tinned chopped tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon stock paste, i use Chicken Stock but you could use Vegetable stock
  • 200 grams risoni

To Serve

  • 50 grams Parmesan cheese, grated or shaved

Recipe's preparation

    Meatballs
  1. Place Garlic, Onion and herbs into bowl and chop 3 seconds / speed 7.

    Scrape Down Bowl.

    Cook 2 minutes / 100º / Speed 1

  2. Add mince, egg and Quinoa flakes and mix on Counter-clockwise operation / Speed 2 until well combined.

  3. Tip out and mould into meatballs, place into varoma bowl and tray.

  4. Sauce
  5. Place Garlic, Onion, Basil, Parsley, Carrot, Zucchini, Celery and Tomato into bowl and chop 10 seconds / speed 6

  6. Add Tinned Tomato, Tomato Paste, Stock and 100grams water.

    Set Varoma in place and cook 20 minutes / Varoma / Speed 2

  7. Add Risoni and cook for a further 10 minutes / 100º / Counter-clockwise operation / speed 2

  8. To Serve
  9. Serve Meatballs and Sauce mixed together and top with parmesan cheese
