- 5 cloves garlic
- 3 cm piecepeeled ginger
- 2 small chillies or to taste
- ½ red onion peeled
- Handful fresh mint leaves
- Handful fresh coriander leaves
- 2 tsp coriander seeds
- 2 tsp cumin seeds
- 2 tsp sesame oil
- Juice 2 Limes
- 50 g soy sauce
- 150 g honey
- 2 kg pork spare ribs or beef short ribs

Recipe's preparation
Place everything except lime, soy sauce, honey and ribs into TM bowl and chop
for 5 seconds on speed 7.
Add juice, soy sauce and honey and
mix for a further 8 seconds on speed 10.
Using a large rectangle of foil,
place ribs inside and then drizzle with marinade. Wrap extremely well. Repeat
with a second piece of foil so the parcel is double wrapped.
Allow to
marinate for at least 2 hours, or as long as possible. (Overnight is best.)
Place ribs in foil,
(complete with marinade) into pre-heated
150ºC oven and cook for 2-3 hours until fragrant and well browned.
Serve
garnished with additional chopped mint and lime wedges

OMG flavour packed extremely tender ribs just couldnt stop at one. My fussy husband gives this a 9/10 and coming from him thats a never heard of as the only comment he usually gives is thats alright unless its his favourite caramel slice.

I made these using pork belly. I boiled the pork bellies first to reduce the fat. I didn't have lime so used lemon. I poured the marinade over the boiled pork and left in fridge for 30 mins or more. I then put them in the oven on a tray, not wrapped or covered and baked at 220c and turned once during cooking and basted with marinade. They cooked so nicely with the marinade slightly caramelising. My husband and I both wished I had made more as it was so delicious.
A winner for sure.
