HUNTERS CHICKEN & PUMPKIN CACCIATORE,with steamed veg

Ingredients

4 portion(s)

Chicken Cacciatore

  • 300 g butternut pumpkin, 2-3 cm cubes
  • 4 sprigs Flat leaf Parsley, leaves only
  • 2 sprig Basil, fresh, leaves only
  • 3 sprigs Oregano,fresh, leaves only
  • 1/2 Red or Green Capsicum, Roughly chopped
  • 2 stalks Celery, Roughly chopped
  • 1 parsnip, Roughly chopped
  • 2 cloves garlic
  • 1 brown onion, Quartered
  • 1 red or green chilli, Roughly chopped (optional)
  • 25 g rice bran oil or olive oil
  • 8 Chicken Lovely legs, Skin and knuckle removed from legs(approx 800g- 1kg)
  • 60 g Veg Stock Paste (EDC)
  • 60 g tomato paste
  • 100 g white wine
  • 100 g water
  • 400 g Tinned Diced Tomatoes

Steamed Veg

  • 2 carrots, Ribbonned
  • 1/2 Zuchini, Ribbonned
  • 1/2 Brocolli, Florettes

Recipe's preparation

    Chiken Cacciatore
  1. 1. Chop pumpkin into cubes, place in Varoma Bowl & set aside.

    2. Ribbon the Carrot & Zuchini, cut Brocolli into florettes & set aside.

    3. Place Parsley, Basil & Oregano in TM bowl, chop 3sec/Speed 7, set aside.

    4. Place Capsicum, Celery & Parsnip in TM bowl, chop 5sec/Speed 4-5, set aside.

    5. Place garlic, onion & chilli in TM bowl, chop 3sec/Speed 7, scrape down sides, add oil and saute 3min/100*/Speed 1.

    6. Place Chicken legs around blade in TM bowl with cut ends up. Place Varoma dish with pumpkin cubes on top. Cook 7min/100*/Counter-clockwise operation/Speed 1.

    7. Add following ingredients to TM bowl, Parley/Basil/Oregano, Capsicum/celery/parsnip, Stock paste, Tomato paste, Wine, Water, tinned Tomatoes. Place Varoma dish of pumpkin back on top. Cook 17min/Varoma/Counter-clockwise operation/Speed 1.

    8. Add Pumpkin from Varoma dish to TM bowl. Place Brocolli florettes, ribbonned carrots & zuchini in Varoma Dish, place on top of TM bowl. Cook 10 min/Varoma/Counter-clockwise operation/Gentle stir setting

    Check that veggies are steamed enough.

Tip

I chose those veggies because they will steam in the 10min and the chicken won't overcook. Other veggies that would be suitable are frozen peas, beans, corn kernals, shredded cabbage, anything that isn't too hard.

This dish is nice served on a bed of mashed potato or pasta or even rice. Also serve with fresh Pizza Bianca prepared earlier and this dish will feed the more hungry family members....  tmrc_emoticons.)

    Great recipe easy to follow! I added cubed mushroom to the Varoma tray at the same time as the pumpkin then moved it into the TM bowl at the same time as canned tomatoes etc. delicious dinner one of our faves!!!

    Thanks narelleashby, so glad you enjoyed it. It's one of our favourites, great that you did cauli rice, I'm going to try it.

    Good idea using breasts, it does make it go further for a family. One day, try it with the legs as meat on the bone also gives so much flavour, I find the meat also falls off the bone a little, and if there is some left over I use it for leftover night by adding it to pasta.

    Family approved said was delicious - I prepared cauli rice first and put in thermoserve, then I sliced 500g of chicken breast instead and it didnt't dry out. Thank you.

    Delicious family dinner.  The only difference I made was to julienne the carrots and zucchini.  Worked beautifully.
