Kofta
- 1 onion, halved
- 1 clove garlic
- 600 g lamb mince
- 1 1/4 tsp cumin seeds
- 3/4 tsp Ground Coriander
- 1 1/4 tsp paprika
- 1/4 tsp chilli flakes
- pinch salt
- parsley, handful
Cucumber Yoghurt
- 1 clove garlic, small
- parsley, handful
- 200 g natural yoghurt
- 1/2 lemon, juiced
- salt/pepper, to taste
- 1 Lebanese cucumber

Recipe's preparation
Place coriander, cumin seeds, paprika, salt & chilli flakes into the TMX bowl. Closed the lid and grind on Speed 9 for 6 secs to grind the seeds and mix the spices.
Add onion, garlic & parsley and chop for 2 seconds on Speed 8. Scrape down the bowl, and chop again for 2 seconds at Speed 8
Add mince and set to Reverse Speed 4 for 5 seconds. Scrape down bowl and again mix at Reverse Speed 4 for 5 seconds.
Using the Kebab sticks, mould the Kofta around the top 1/3 of the stick and repeat until all of the mixture is used.
Place in refrigerator for at least 30 mins so that the flavour can develop.
Cook on BBQ until brown on the outside and cooked through – but still moist.
Serve with TMX Rice
Add garlic and parsley to the bowl and chop for 2 seconds on Speed 8. Scrape down bowl and repeat.
Add cucumber and Chop on Speed 5 for 3 seconds. Check the size of your cucumber and mix again if still too big. Be careful not to turn this into juice (yuk!)
Add yoghurt, lemon juice and salt & Pepper, then mix on Reverse Speed 3 for 4 seconds to combine the ingredients.
Serve with Kofta and Rice

Tip
You dont have to make these on the stick - just shape into small sausage shapes.
Dont make these too big otherwise they can look a bit odd

Cooked these babies tonight, and they were quick and delicious... Everyone approved in my house. I didn't add any extra spices, and found them flavoursome, but they are lacking a little something. I also made the yogurt and then realised you don't say how much cucumber but I used half a lebanese cucumber and was yummy but runny. Will be making this often once I tweak some flavours Thanks for the recipe x

These were yum, I was a little dubious making them without egg, but they didnt need it!
I took others advice and doubled the herbs and spices. I didnt have time to let it sit, so made them into balls/small rissoles and bbq'd them. Soooo yum, and great leftovers!
I also forgot cucumber, so substituted in baby spinach. Was a hit!

Very tasty Kofta recipe. I also added a little bit extra spices (as others had recommended) but I added smoked paprika instead of normal paprika which added a beautiful smokey flavour to the Kofta's. Great Recipe.

for the cucumber i used 1 Lebanese cucumber-deseeded and roughly chopped but only needed to put on speed 3 (Reverse) for 2 secs.

Thank you, this was v tasty. A bit last minute so I used coriander instead of parsley - v good actually! Next time I will bump up the chilli (we like spicy food). And i served it with cous cous, which is lovely with the cucumber yoghurt. You actually dont say how much cucumber, I used one whole Lebanese cucumber and that seemed fine, but should I have used more? Husband rates it v highly, so will def add to list of trusty meals!
