Koresh Ghormeh Sabzi

Ingredients

6 portion(s)

Sabzi (Herbs)

  • 3 bunches flat leaf parsley, wash and remove from stem (70gr approx)
  • 15 grams cilantro, wash and remove from stem (a few leaves only)
  • 1 pinch fenugreek, preferably fresh, seeds are ok as well.
  • 3 bunches chives, washed
  • 30 grams extra virgin olive oil

Khoresh (Stew)

  • 4 cloves garlic
  • 1 onion, large, cut in quarters
  • 1 tsp tumeric
  • 70 grams extra virgin olive oil
  • 500 grams diced meat, (beef or lamb)
  • 2-3 dried limes, pinch with the tip of a knife to release more flavour
  • 1 potato, diced (optional)
  • 3 cups of dried Ghormeh Sabzi, if not using the herbs recipe described before
  • 1 can KIDNEY BEANS, washed (or natural kidney beans previously soaked in water for a few hours)
  • to taste Salt and Peper
  • 200 grams water, or until it covers the meat.

Recipe's preparation

    Ghormeh Sabzi Herbs
  1. Add washed herbs to TM bowl. Chop 2 Sec at speed Turbo.

  2. Without the measuring cup (for the water to evaporate), sauté 5 minutes Varoma speed 1. Start without oil.

  3. Still without MC, add oil and sauté  10 min Varoma Speed 1.

  4. Remove the herbs and set aside. Rinse the bowl.

  5. Khoresh (Stew)
  6. Add onion and garlic and chop for 4 sec speed 5. Scrape down.

  7. Add turmeric and olive oil. Saute 4 min Varoma speed 1.

  8. Add diced meat (lamb or beef) and cover  with water (approx 200g). Add dried limes (make small insertions on the limes with the tip of a knife). Cook for 40 min counter-clockwise operation 100 deg Speed Gentle stir setting. Replace the cup with the basket to allow steam out).

  9. Add the kidney beans, the herbs, potato (optional), salt and pepper. Cook 15 min counter-clockwise operation 100 deg Speed Gentle stir setting. Remove the limes in that step if you don't want a very citric flavour.

Tip

I strongly recommend to serve the Ghormeh Sabzi with this persian style rice:

I have also used this Khoresh recipie to create the khoresh described above.

Some people like it more oily, they use butter and extra oil... well... I prefer this healthier version, it still tastes delicious!
