Lamb, mint and rosemary pies

Ingredients

12 portion(s)

Pie filling

  • 8 sprigs rosemary, leaves removed from stems, discard stems
  • 1 brown onion, approx. 180g quartered
  • 4 cloves garlic
  • 1 carrot, unpeeled roughly cut
  • 50 grams Olive oil or coconut oil
  • 1000 grams Lamb, leg of lamb diced or lamb mince
  • 100 grams tomato paste
  • 50 grams Mint Sauce, EDC mint sauce
  • salt & pepper, to taste

Pastry

  • 1 quantity of the shortcrust pastry from the 'Every Day Cookbook', or store purchased shortcrust pastry.

Recipe's preparation

    Pie filling
  1. Chop rosemary in bowl 5 sec /speed 7, set aside.

  2.  

    Place onion, carrot & garlic into bowl chop 3 sec / speed 7

  3.  

    Add oil and cook 5 minutes / varoma / speed 1

  4.  

    Add lamb cook 10 minutes / 100 / Counter-clockwise operationGentle stir setting

  5.  

    Add rosemary, tomato paste, mint sauce, salt and pepper

  6.  

    Cook 20 minutes / 100 / Counter-clockwise operationGentle stir setting with simmering basket in place of MC

  7.  

    Depending on how fine you prepared your lamb, you may like to give it a quick blitz at this stage.

  8. Pastry
  9. Have the everyday cookbook pastry prepared before the meat filling is cooked.

    You can alternativly use commercialy produced pastry.

    We have a pie maker so I cook the filling in the Thermomix and then finish them off in the pie maker the quantity of the filling makes 4 pies and they are approximatly 20cm in diameter.

     

  12. Bake in pie maker or as individual pies in oven at 200 degrees for 20 - 25 minutes.

     

  13. A large family pie would take longer adust as required.

Tip

We have a pie maker so I cook the filling in the Thermomix and then finish them off in the pie maker the quantity of the filling makes 4 pies and they are approximatly 20cm in diameter.

You can easily bake these traditionaly, in the oven. Options include baking as one large family pie of as smaller individual pies.

For another option serve without the pastry as a slow cooked meat dish. 

Great meal for large families. Easily feeds 6.

Puff pastry could also be used.

    Just used this and finished off in an electric pie maker. If using commercial pastry, they are not quite big enough for one pie per sheet so might be best to make your ow pastry.

    We had this for tea tonight, and it was delish!
    Home grown succulent lamb, boned and cubed by my farmer hubby and cooked exactly as stated.
    I wouldn't change a thing.
    He loved it. I didn't blitz the meat at the end as I tasted a piece and thought it was fine a bit chunky.

    Whole family loved this. Added sweet potato in little cubes with meat. Cooked pastry fingers in the oven instead of a whole pie.

    This was surprisingly delicious! I was tempted to leave out the mint sauce but I am so glad I added it. Next time I think I won't make is as a pie, instead use the meat over jacket potatoes, with mash potato, pasta etc.

    This was great! Made only half batch, but used nearly whole amount of mint sauce (cause I love mint sauce!). Used frozen pastry & my very old Sunbeam pie maker.  Mixture made about 8 pies. We loved them.

    I did add peas to this recipe (half a cup of frozen peas) and used puff pastry.  We also didn't add the mint sauce.  This was a delicious recipe.  Thank you. tmrc_emoticons.)

    Lovely Recipe! Used the leftover Roast Lamb from the other night (forgot to weigh, I'm pretty sure there was more than 1000g). I only used 35g of olive oil, I didn't put the Rosemary aside I just continued with the recipe. I USED short crust pastry for the base of my pies and puff pastry for the lids. Made 16 pies in the sunbeam pie maker! Thankyou!
