Ingredients

8 portion(s)

Lamb Saag/Saagwala

  • 1 heaped teaspoon coriander seed
  • 1 heaped teaspoon cummin seeds
  • 1 heaped teaspoon Fenugreek seeds
  • 1 bunch silverbeet, about 800 grams
  • 1 --- large onion
  • 3 cloves garlic
  • 3 cm ginger fresh
  • 20 grams EVOO (extra virgin olive oil)
  • 1 heaped teaspoon garam masala, See EDC
  • 1 teaspoon tumeric, ground
  • 150 grams Cashews
  • 3 tomatoes
  • 300 grams water
  • 1 tablespoon TM stock paste
  • 1 bunch coriander, fresh
  • 1 teaspoon salt
  • 750 grams Lamb, Diced 2cm cubes
  • 200 grams Yogurt
  • 1 Lemon Juiced
  • 1 chilli red, (Optional) Add more for a hotter curry

Recipe's preparation

    Lamb Saag/Saagwala
  1. Add Cummin, Coriander and Fenugreek seeds to TM bowl and roast for 2mins, 100 deg, speed 1, then mill for 2 mins, speed 8.  Set aside in a bowl.

    Add about half of the chopped silverbeet into bowl and chop for 10 sec on speed 5 mixing with spatula.  Cook for 3mins, 100 deg, speed 3 to reduce volume, then add the rest of the silverbeet and chop for 5 sec on speed 5, mixing with spatula.  Cook for 10 mins, 100 deg, speed 2 and then set aside in simmering basket to drain.

    Add ginger, onion, chilli and garlic to TM bowl and chop for 5 sec on speed 6, then scrape down sides.

    Add milled spices, garam masala, tumeric and oil to TM bowl and saute for 4 mins, 100 deg, speed 1.

    Add drained silverbeet, cashews, tomatoes, water, stock, salt, coriander and puree for 1 min, speed 8.

    Add lamb and cook for 1 hr, 100 deg, Counter-clockwise operation, speed 1.

    Pour into thermoserver, add yoghurt and lemon juice and stir through.  Place lid on thermoserver.  Steam some rice using the EDC recipe.  We love to have this with cheese naan too, just remember to make the dough before you start the curry : )

    I made this wonderful dish today with half silverbeet and half choko as I was given some chokos from a friend's garden. As chokos don't have any flavour on their own this was divine. Something for others to think about if they need to bulk up their silverbeet 800gram requirement. I made it with paneer (no lamb) and cooked it for 30 mins instead of 60 mins. It was sensational and certainly better than takewaway palak paneer.

    dtotheaisy: I’ve cooked this with paneer, it’s delicious! I add the paneer after pureeing, stir through with a spatula, then cook for around 5 minutes (or until heated through), 90 degrees Counter-clockwise operation Gentle stir setting.

    This was SOOOOO good!!!

    i even forgot to add the lemon and yoghurt at the end and didn't miss it.

    Cooked it for just thirty minutes the night before a dinner party (to allow flavours to develop) and finished off for a couple of hours in a slow oven before serving, RAVE REVIEWS!!

    Made this today. Did cook it longer in the slow cooker, as made it too early for dinner. What a delicious curry, everyone licked their plates and commented best ever. I'm amazed I made a lamb saag, which was so lovely. I only had lamb chops, so cooked them on the bone, the meat fell off the bone, so tender and flavoursome. This will be a family favourite, no going to takeaway in future, this was voted better.

    I haven't even finished cooking this yet and I am already in love with this recipe!! Used fennel seeds as couldn't find fenugreek and added a little bit of chicken stock when cooking the silverbeet to try and reduce a bit of the bitterness that you can get with s/b. Totally delicious and it's not yet finished!! Great recipe - will definitely be added to our regular meals roster.

    Will definitely cook again as the flavours were delicious. The bunch of silverbeet I had weighed less than 800g which may have been why the sauce was really thick so I had to add more water. Also cooked for 2 hours in the oven once prepared. Authentic taste!

    Absolutely loved this recipe. Made it with chicken as what was in the fridge. Appreciate the tips to reduce the cooking time for chicken by 30 Mins. Will be making this again soon with lamb. 

    Also used yellow mustard seeds instead of fenugreek seeds as I could not find them at the local store. Still tasted amazing.

    Sensation!!   Lamb saag is one of my favourite curries and this did not disappoint, definitely restaurant quality!  I made the sauce in the thermomix but took the advice of a few of the messages and then slow cooked the lamb and sauce for 3 hours and it was just incredible.  Also added a bit of feta as I didn't have any paneer which I will add with the left overs.  Thanks for sharing such a brilliant recipe.

    So full of flavour. I love curries and I have always seen Saag on restaurant menus but have never tried it before, so glad I made it!! I only wish I could have got hold of some Fenugreek to make it exactly as recipe directed. Still lovely.

    This was really yummy! I didn't have a chili so just sprinkkled in chili flakes. As with most recipes of this nature, I made the sauce in my Thermomix and then put the raw chopped lamb and sauce in my slow cooker and cooked on high for about three hours (would normally cook on low but was out of time!). Much more tender, and you can also add more lamb because there is loads of sauce. I just used shop bought garam masala and it was fine. Very tasty - even the kids ate it.

    I made this today and it was beautiful. I had quite a bit of the sauce leftover however. I was thinking of cooking up some more lamb and a few veges in the remaining sauce but am wondering if this will be possible with the yoghurt. Will it separate?

    LOVED this recipe. I used 800g of silverbeet leaves (without the white stalks) and it made HEAPS of sauce. So I poured off about half of the sauce and froze it for a quick and easy meal a few weeks later (where I added 500g of fresh diced lamb again) and cooked it through. Mmmmm, so yummy!

  • Lovely spice balance and easy

    Lovely spice balance and easy to make, however I also found this slightly bitter, but my silver beet wasn't fresh.  It had been in the fridge for two days.  So will try it again with fresher greens or spinach.  I wasnt able to cook it in the TM for the whole time as I had to use the TM to make a second curry so after adding the lamb meat I cooked it in a casserole in the oven at 180 C.  I also used shoulder which wasnt the best quality so will try leg meat next time.

    I froze the extra in individual portions with left over rice and I though it was much nicer a week later upon reheating for a pack lunch at work.  With hind sight that may have been because I had origionally served it alongside a butter chicken which was much sweeter.
