(LCHF) LOW CARB BACON CHEESEBURGER CASSEROLE

Ingredients

  • 1 onion, roughly chopped
  • 200g Bacon, roughly chopped
  • 40g Butter
  • 500g Beef mince
  • 1 tsp Garlic powder
  • 250g cream
  • 3 eggs
  • 70g tomato paste
  • 100g grated cheese
  • salt and pepper to taste

      TM 5
      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place the onion, bacon and 20g of the butter into the TM bowl and sauté for 5 minutes, 120 degrees, speed 1, MC OFF.

     

    When the bacon has been sautéed, remove from the TM bowl and set aside.  Drain off any excess liquid.

     

    Add the rest of the butter (20g) to the TM bowl along with the beef mince and garlic powder and cook for 10 minutes, 100 degrees, reverse, spoon speed (slowest speed), MC ON.

     

    Transfer the mince from the TM bowl to a casserole dish and stir the bacon and onion through the mince.

     

    Without washing the bowl, add cream, eggs, tomato paste, 80g of the grated cheese, salt and pepper to the TM bowl and mix for 10 seconds, reverse, speed 3, MC ON.

     

    Pour the egg mixture over the beef and bacon.  Top with the remaining 20g grated cheese and bake in the oven at 180 degrees for 30-35 minutes or until cheese is golden on top.

     

    Serve on its own or with a side of salad or cooked vegetables.

    Absolutely delicious 😋 I read the comments beforehand and the only changes I made was to chop up the bacon and onion before sauteeing and then I added Mustard on the mince before going in the oven. Thank you Tanya for another fantastic dish!!

    Dani75: you could double the recipe without a problem. I would check the mince and stir with a spatula to ensure even cooking but then it does finish off for over half an hour in the oven so should be fine - let us know how it goes if you do double it tmrc_emoticons.)

    This was a really different and delicious dish that was enjoyed by all my family. Next time I would be sure to drain excess liquid from the mince mixture as well as the bacon mixture though. This has been added to my 'regular' recipes. Thanks for sharing tmrc_emoticons.)

    Easy and Delicious. I blitzed the bacon and onion mixture just before I set it aside in my casserole dish. My Son thought the sauce (egg, cream mixture) was a little too creamy so next time I'll reduce the cream a little. I blitzed 2 garlic cloves in the bowl instead of using garlic powder than I added the mince and butter.
    Thank you fir the recipe. This is now one of my easy weekday meals!

    Ok I doubled it, I used coconut cream in place of normal cream and to the mince i added mushroom, red capsicum and a zucchini blitzed in the thermie with some taco seasoning added and salt to taste. It was a hit with the whole family, served with mashed potato, cauliflower and brocoli.

    Very tasty. Iused a capsicum instead of bacon as I had none, drained the everything as previous comments suggested. Added dijon mustard over the mince before adding the sauce.Had to double the recipe as I am feeding six. Ended up with leftovers for work lunches too.
    Nice to have something that agrees with my belly. Thanks for the recipe.

    I placed the onion, bacon, some capsicum and fresh garlic in bowl and chopped for 4 secs speed 4 as suggested in other comment.
    I will also next time drain the liquid from the bowl after I have cooked the beef.
    but all in all delicious and will be making this again!

    Yum....totally yum! After reading the previous comments i decided to pan fry my mince bacon onion and i used fresh garlic. Also realized i had no cream left so i used 250mls of evaporated milk, added 1 extra egg and 1 heaped tblsp of cornflour. Did everything else as per recipe....wow smelled amazing!

    Also i didn't add the mustard to the casserole as suggested in comments as i have littlies but i did smear some dijon mustard ontop when i served the adults.....Absolutely delicious. Husband went back for thirds!

    I followed the recipe but also took into account tips from others ... so I did add the dijon mustard with the mince (1 Tablespoon) and I drained the bacon/onion mixutre on paper towel, and also drained the mince before before putting it into the cassarole dish. It cooked beautifully, didn't have liquid, but I felt the mince mixture was a little meaty tasting (and that's not my thing) so will try to add some more flavour to the mince next time!

    Made this tonight and wasn't impressed. It was a sloppy mess. Cooked at 180 for 35 mins, and it was very liquidy and the egg top seemed almost fluffy and unset. 

     

    Not it sure where I went wrong - followed the recipe to the letter.

    Yay, another great LCHF recipe!  This was so quick and easy, and delicious!  My boys loved it and I ate the leftovers the next day!  Yum! 

    Hi, AleciaJoubert, no not a silly question tmrc_emoticons.;)  When I first started using my Thermi, it took me ages to figure that out ... the MC is the "measuring cup" (clear plastic in the middle of your Thermomix lid).  Some recipes suggest it be left off to let extra steam out of the top of the lid while cooking.

    Easy recipe and so yummy! Served with a salad & garlic bread (for the hubby & toddler) and everyone loved it!

    I just added 1 tbsp of Dijon mustard into the meat and mixed the egg mixture through in the casserole dish. Definitely cooking it again soon.
