Mango Chicken
- 420g can mango slices in syrup,drained
- 170g can coconut cream
- 1 tablespoon vegetable stock concentrate
- 80 grams water
- 2 cloves garlic
- 1 red chilli fresh
- 4-6 Chicken breasts 125g each or boneless thighs
Rice and vegetables
- 250 grams basmati rice
- 400g Green beans, trimmed
- 300g broccoli
- 1 fresh sprig parsley or coriander

Recipe's preparation
add drained mango slices, coconut cream, water and stock to TM bowl and blend on speed 7 for 10 -20 seconds or until smooth. Set aside. add garlic and chilli and chop on speed 7 for 5 seconds add oil and sauté for 2 minutes/100o/speed 1 add chicken and cook for 15 minutes/100o/reverse/speed soft add mango puree and cook with MC off for a further 10 minutes/100o/reverse/speed soft.set aside in Thermoserver
Cook rice as per Everyday Cookbook. Place vegetables into Varoma Dish and steam while rice is cooking

Great recipe and tasty, but next time I am going to thicken sauce some with cornflour so that it sticks to the chicken.

Following all comments.. I used a chicken stock for extra flavour. Threw in red capsicum, carrot and celery with the garlic. The chicken did shred as told by others,but I didnt mind that. Left out the water and added a small.amount of corn flour. My infirm parents loved it, but with hindsight, will probably serve on mash potato over rice. Will def do again.

I added a tsp of vinegar and fish sauce after tasting, as it had no taste. The vinegar and fish sauce improved it a little but still very bland. Will not try again.

Nice easy meal. I agree that the oil is missing from the list of ingredients. I used about 25 - 30 gms of coconut oil which added to the tropical taste of the mango. The chicken was shredded a little more than what you would normally like it to be, however, the taste was terrific. Will probably add a little more chilli next time. We steamed carrots and broccoli in the varoma while cooking the jasmine rice. Another tasty meal to add to the menu bank. Thanks.

Not a big fan. There is no
Not a big fan. There is no measurement for the oil in the recipe - I used 1 Tblspn. I also added 2 red chillis (without the seeds) and it was still a bit bland. I used frozen mango (defrosted) but will use fresh next time. There was too much sauce so I will omit the water next time and add a little more coconut cream. Probably needed less cooking time and maybe a little cornflour to thicken it up. I will try it again with the adjustments.

Mild flavour, not spicy. I used fresh mango instead of tinned mango. i added one red chilli but there was no spice, would add a second chilli next time. I cut the chicken into chunks, and ended up with shredded chicken. It is a very saucy dish, you could add additional chicken or vegetables easily.
I used carnation brand light
I used carnation brand light evaporated coconut milk and left out the water, it doesn't look appealing, the flavour is ok but it seems to have separated slightly and is very runny. Will defiantly get some coconut cream and try it again.

Really good! I used frozen mango that I defrosted and I only had coconut milk so used that but didn't add the water. I chopped up cauliflower andbroccoli with the garlic and omitted the chilli as for young boys. Kids loved!

Made this for dinner, minus
Made this for dinner, minus the chilli and it was great! Hubby loved it, as did my 6 month old (hers was puréed). I also cut chicken into bite sized pieces & only needed 5 mins of cooking time (as per a previous comment).
Will definitely be making this one again!

Great recipe! I used low fat
Great recipe! I used low fat coconut cream but wish I added more mango (next time!). Instead of rice, I used cauliflower 'rice' (www.superkitchenmachine.com/2012/15926/mock-rice-thermomix-recipes.html) which is a healthy alternative.

Will be making this meal over and over. It was delicious and my 2 1/2 yo even loved it. We did leave out the garlic and chilli though and used a fresh mango as they are in season. Thankyou for sharing a lovely recipe.

My 9 year old helped me to cook this and the verdict from the whole family was lovely, lovely, lovely! We don't usually eat chilli so I used about 1/3 teaspoon minced chilli and it was perfect for us. I even braved the Varoma for the veggies!

Delicious! I used the flesh of 3 Kensington Pride mangoes. My veges didn't cook while the sauce was cooking, but it was on 100'C, not varoma, so I just steamed them separately at the end. I look forward to making it again.

I'm not a huge mango fan but
I'm not a huge mango fan but I had fresh mangoes to use so I thought I'd give it a go. It is so delicious! I left out the chilli as I made this for my kids, and added in red lentils as I only had a small amount of chicken, but it was very tasty and the kids loved it!! I do think chicken thigh would be better than chicken breast but I'm just being picky now. Very yummy!

I used lite coconut milk and it worked well. Didn't use the water, just used more coconut milk. Flavor prob would be better with coconut cream but still very nice. Added some corn flour to thicken. Cut chicken thigh into bite size pieces and cooked them on their own for about 5 mins or so not the 15 mins stated. Was perfect and not shredded. Thanks for a great dish.

Tried this tonight as I had fresh mangos I needed to use up. So I used 400g of fresh mangos. I couldnt see how much oil to add so I just added 20g. And I used chicken breast. I had them in quite large chunks but the blades always shred them even in reverse. It didn't take away anything from the recipe though. It was great and so easy! I added a whole chilli which added a lot zing to my husbands liking. I accompanied this with a spinach, avocado and mango salad with dried cranberries. Was a hit! Thanks for posting!

Made this last night for the
Made this last night for the carnivores and it was celebrated by all! Should have left the chicken in larger pieces though as the chicken was so tender, it was coming away in stringy bits but didn't take away from the flavour of the recipe thank you.

I cooked this at my daughters and had to adjust a bit

It tasted good but some chicken was too small and got caught under blades

I used thighs and pre cut
I used thighs and pre cut them into 6 bite sized pieces. Next time I do this dish (and I definitely will), I will cook the chicken in the first stage for about 12 mins. Great flavours...it's a keeper!

Having got my Thermomix
Having got my Thermomix yesterday afternoon, I cooked this tonight. It was delicious. But I found the chicken to be a bit tough - still nice! I reduced the cooking time by about 2 mins and I think I could reduce it further. Thanks!

My whole family really enjoyed this meal, even my fussy eater 10 year old!! Defiantely will be on my remake list. Answer to Elsie, I was a bit confused also but did cut up the chicken into bites sized pieces as I was worried about overloading the Thermomix, but I did ask on the face book forum and the answer was 125gm pieces... not sure if I would like that in my machine that way??

Personally I would cut up the chicken into slightly larger than bit size peices. That way the chicken can move around the bowl and cook threw.
