Meat Ball fettuccine with a creamy pesto sauce

Ingredients

PESTO

  • 30 g pinenuts
  • 20 g Basil leaves
  • 70 g Parmesan cheese, Small cubes
  • sea salt
  • 50 g olive oil

MEAT BALLS

  • 500 g mince meat of choice, Or a combination- beef, lamb or veal
  • 30 g fresh breadcrumbs
  • 1 egg
  • salt and pepper to taste
  • 100 g mozzarella cubed, Very small pieces

CREAMY BASIL SAUCE

  • 1 Small Onion halved
  • 150 g cream
  • 50 g Pesto
  • 20 g olive oil
  • 20 g cornflour
  • M/c water
  • 30 g Parmesan cheese, Chopped

FETTUCCINE

  • 350-400 g pasta of your choice

Recipe's preparation

    PESTO
  1. Describe the preparation steps of your recipe

  2. Lightly toast Pinenuts 5mins 100deg speed 2. Allow to cool.

    Add garlic,basil, parmesan and salt.  Mill 5 sec speed 9. Scrape downsides and add oil.  Combine 10 sec speed 3/4.

    Set aside leaving about 3 tbs of pesto in TM bowl. 

  3. MEAT BALLS
  4. You can make your own mince using EDC instructions.

    Add mince, breadcrumbs, egg and pepper.

    Mix 30 sec speed 3/4 Counter-clockwise operation or until well combined.

    Shape a level Tbsp around the small mozzarella cube and repeat.  Toss lightly in flour shaking off excess.

    Meat balls can been steamed in the VarOma.  On the stove top cook meat balla until brown tranfer to baking  dish and bake covered for 10mins at 180deg or until cooked though. 

  5. CREAMY BASIL SAUCE
  6. Chop onion 5 secs speed 7, scrape down sides add oil and sauté. 3-5 mins Varoma speed 2.

    Add cream, pesto, parmesan cheese, cornflour and MC water. Cook for 6 mins 80deg speed 2.

    Cook fettuccine using EDC instructions.

  7. Once fettucchi is cooked drain, add half creamy pesto sauce.

    Serve pasta with meat balls on top and pour over extra pesto creamy sauce.

    Garnish with basil leaves and freshly grated Parmesan cheese.
