Beef Meatballs Saganaki (porcupines)

Ingredients

4 portion(s)

meatballs

  • 500 g Beef mince
  • 1 onion, halved
  • 100 g white rice, uncooked
  • 1 egg yolk
  • 1 teaspoon dried organo
  • 50 g fresh parsley, leaves only

simmer sauce

  • 2 cloves garlic
  • 1 onion, halved
  • 1 zucchini, roughly chopped
  • 20 g olive oil
  • 3 tablespoons tomato paste
  • 1 bay leaf
  • 800 g tinned tomatoes or 700g jar of passata

to serve

  • 1 Lebanese cucumber, diced
  • 200 g Corn, frozen, tinned or cob
  • 100 g feta cheese, diced or crumbled

Recipe's preparation

    meatballs
  1. 1. Add halved onion and parsley to TM bowl. Blitz 3 sec/speed 7. scrape down sides of bowl.

    2. Add mince, oregano rice and egg yolk. Mix 10-15 sec/Counter-clockwise operation/speed 5 or until well combined.

    3. Roll into small balls and place in Varoma tray, put aside. Clean and dry TM bowl.

  3. 1. Add halved onion and 2 garlic cloves to TM bowl, chop 3 sec/speed 7. Add zuchini and grate 3 sec/speed 5. Scrape down sides of bowl.

    2. Add oil and saute 3 min/Varoma/Counter-clockwise operation/speed 2. Scrape down sides of bowl.

    3. Add tinnned tomatoes (or passata), tomato paste and bay leaf to TM bowl. Close lid.

    4. Add corn to Varoma and put in position. Cook meatballs and corn 25min/Varoma/Counter-clockwise operation/speed 1.

    5. Dice cucmber and feta while meal is cooking.

    6. Check meatballs are cooked and rice is "sticking out" of meatballs.

    7. Take off Varoma lid and spoon meatballs into thermoserver or serving dish. Remove bay leaf from TM Bowl. Pour sauce over meatballs, using caution as it will be hot!

    8. Serve meatballs with crumbled feta, steamed corn and diced cucumber.

Tip

Remove the bay leaf before serving

    A family favourite

    This recipe is a go to favourite for my family. I add 2 tins of tomato to the sauce as well as a load of other veggies such as a carrot, mushrooms and celery. Great way to sneak in veggies. I also let the meatballs soak in the sauce for about 10 mins before serving. Delicious!

    These meatballs were a hit, however as mentioned below not enough sauce and it was too thick. I will try again but will definitely double the sauce mix.

    These were delicious. I did have to google whether to use cooked rice or uncooked so maybe the recipe should be clearer about that. It wasnt until they cooked that I realised why they are called porcupines I also used fresh tomatoes rather than canned..in future I would use more than 400g to have more sauce
