Mexican Slow Cooked Beef

Ingredients

Meat Marinade

  • 2 tsp mexican seasoning, (see related recipe)
  • 1 clove garlic, peeled
  • 1/2 large red chili
  • 1 tbsp lime juice
  • pinch salt

Beef Ingredients

  • 1 kg gravy beef, large dice
  • 1 brown onion, peeled, halved
  • 50 g olive oil or ghee
  • 1 ardmona tin chopped tomatoes
  • 1 tablespoon tomato paste
  • 1 tablespoon vegetable stock concentrate
  • 2 tablespoon mexican spice seasoning
  • 6

Recipe's preparation

  1. Add garlic and chili to TMX. chop speed 6, 3 seconds.

     

    Add lime juice, seasoning and meat and mix on reverse speed 3.

     

    Remove from bowl and mrinade meat for a minimum of 3 hours - overnight.

     

    --

     

    Add onion to TMX bowl. Chop speed 6, 3 seconds. Scrape bowl down.

     

    Add oil to TMX. Cook for 6 minutes, speed 1, varoma. MC OFF.

     

    Add tin tomato, tomato paste, vegetable stock concentrate and 2 tbsp mexican spice mix. Cook for 8 minutes, speed 2, varoma. MC ON unless you want a mess!

     

    Blend on speed 10 for 10 seconds. *****MC ON*****

     

    Scrape bowl down and add marinaded meat. Mix through sauce with spatula.

     

    Cook for 30 minutes, speed slow, reverse. 80 degrees. MC ON.

     

    Once meat has finished cooking, transfer to a casserole dish, cover with alfoil and continue to cook for 2 hours at 150 degrees in the oven. With 20 minutes to go, remove alfoil.

Tip

    Everyone loved the beef. Mine didn't shred easily so I put it back in the bowl in two batches on reverse speed 4 for a few seconds and it worked a treat!

    Great recipe, very easy to make and loved by all who ate it!

    I did the initial parts in the TM5 then cooked in a slow cooker all afternoon - was delicious!!

    I also used the spice mix recommended, that was great too tmrc_emoticons.)

    I served with Quirky Cooking refried beans + a kale, tomato, corriander salad + corn chips + rice + the slow cooked beef.

    Will definitely cook this again!

    This is an excellent dish - fantastic flavour! We (being a bit lazy) followed the recipe but instead of cooking for 30 mins in TMX and then oven - we followed cooking instructions for TMX mexican slow cooked beef in the Cooking for me and you cook book - 1 hour in TMX only and it worked perfectly (just added a little water).

    This was such a simple recipe and full of flavour.  I substituted the chilli for chilli flakes as that was all I had and put some kidney beans in when I took the al foil off.  It was a tiny bit spicy for us but I wouldn't bother changing it for next time. Definitely one of the best dishes I've made yet.

    I looooooooove this. Really simple to make and i get so many different meals out of it too - but in fact i don't mind it just by itself! Its also good as once I have made the seasoning I don;t have to use the thermomix if it's busy doing other meals. I just make the marinade in a bowl and then cook in the slow cooker the next day for about 5 hours or so..... perfect! tmrc_emoticons.)

    This is a great recipe, thanks for sharing. Do only use gravy or cheap cuts of beef - I made the mistake of getting porterhouse the second time I made it and it was a disaster... beef mush!! lol!

    Really enjoyed this, marinated my meat overnight, also added soem kidney beans before I put it in the oven, it was a little spicy for the kids even though I didnt put any chilli in it, but just added a dolup of sour cream into there plates, they ate it all up!

    Great recipe. I didn't get it started in time and didn't marinate the meat and only cooked in the oven for 1 hr and was still delicious. I also added kidney beans and mushrooms when I put into the oven.
