Moroccan Lamb
- 1 onion, peeled & halved
- 1 garlic cloves
- 20 grams olive oil
- 500 grams diced lamb
- 2 teaspoons ground cumin
- 1/2 teaspoon ground cinnamon
- 400 gram tin of chick peas
- 400 gram tin of tomatoes
- 1 tablespoon TM vegetable stock concentrate
- 50 grams pitted dates
- 50 grams tomato paste
- 1 juice of 1 lemon

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Place onion and garlic in the bowl and chop 3 secs, speed 5
Scrape down sides and sauté 3 minutes, Varoma temp, speed 1
Insert butterfly.
Add lamb and spices and cook for 7 minutes, 100 degrees, reverse speed soft.
Add remaining ingredients except chickpeas to bowl, cook 15 mins 100 degrees, reverse, speed soft.
Then add chickpeas and cook for another 3 mins, 100 degrees, reverse, speed soft.
Allow to rest in thermoserver for 10 -15 mins before serving.
Serve with pasta or rice. I made cauliflower rice to accompany it!

I put two big handfuls of spinach in the thermoserver before I add the mix in to thicken up. And I serve on cous cous with currants and toasted slivered almonds. Delicious!!

This was so simple & so tasty. Hubby isn't a fan of chickpeas so I only used 1/2 a tin & I also did 1&1/2 times the spices & cooked for a bit longer as my lamb was a marked down pack & was quite fatty & sinewy.

I have always wanted to try Moroccan cooking but it's always looked too tricky. Not any more.... This recipe was so quick and easy and the result; Wow!
I opened the lid and it looked as if I'd been slaving over the stove for hours. I had to make a few substitutes (didn't want to go to shops) and they worked fine. Prunes instead of dates, Moroccan seasoning instead of cumin and lime instead of lemon.

Beautiful dish, highly
Beautiful dish, highly recommend to make, it's so quick and easy. Made a few changes due to taste and not having some ingredients. Added 1/2 tsp ground ginger and a pinch of cayenne pepper With the other spices. Used chicken stock cube instead of vege ( just prefer it with lamb dishes). Only had prunes and apricots, so combined was about 150g of dried fruit ( prunes are great, adds a gloss and mellow flavour to the dish without being too sweet). Also cooked the meat for 25 mins instead of 15, my lamb was diced a bit big. No fresh lemon, so used some homemade preserved lemon, this was a great addition to the Moroccan flavours, recommend to try if you can!
