Moroccan spiced lamb mince

  • 1 Brown Onion (peeled & halved)
  • 3 cloves garlic
  • 2 cm knob of fresh ginger, peeled
  • 2 tablespoons EVOO (extra virgin olive oil)
  • 3/4 teaspoon tumeric
  • 1/2 teaspoon chilli powder
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 40-80 grams Saltanas
  • 2 teaspoons vinegar
  • 500 grams lamb mince
  • 2 teaspoons Garam Masala (see 'Everyday' Cookbook)
  • 2 tablespoons Pine nuts, toasted, to serve
  • Hummus to serve

Recipe's preparation

    Moroccan spiced lamb mince
  1. Put onion, garlic and ginger into bowl, chop 4 secs speed 7

  2. Add oil and saute 3 mins, Varoma temp, speed 1

  3. Add tumeric, chilli powder, salt, sugar, saltanas and vinegar and mix 10 secs Counter-clockwise operation speed 2.  Saute 2 mins, Varoma temp Counter-clockwise operationGentle stir setting

  4. Add lamb mince and cook 13 mins, 100 degrees, Counter-clockwise operationGentle stir setting

  5. Add Garam Masala and cook 2 mins, 100 degrees Counter-clockwise operationGentle stir setting

  6. Prepare and cook your favorite ravioli (I make potato and roast garlic) and serve topped with lamb mince and pine nuts sprinkled on top and hummus on the side
