Noodle Stir Fry with Chicken

Noodles Stir Fry

  • 200 grams Vermicelli noodle
  • 1 fillet chicken thighs, cut into thin strips
  • 2 clove garlic
  • 15 grams olive oil
  • 1/2 tsp brown sugar
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 1 tbsp soy sauce
  • 210 grams Woolworths 1 minute Stir-Fry Veggies, (see tip)

Recipe's preparation

  1. Soak vermicelli in water until just soft

  2. Marinate chicken with a little bit of soy sauce, salt, sugar & pepper. Set aside until required

  3. Chop garlic 5 seconds on speed 5. Scape down

  4. Add oil and sauté for 2 minutes on 100c speed 1

  5. Add chicken around blades & cook 2 minutes 100c reverse soft. Ensure chicken is not sitting on top of the blades as it will not cook properly due to the short cooking time. Break up chicken with spatula if required

  6. Add vermicelli first then sprinkle the seasoning on top & around the bowl so the seasoning is not just in the one spot (see picture)

  7. Add veggies on top of the noodles then cook 4 minutes 100c reverse 1

Tip

If you’re super lazy like me, you can buy ready to stir-fry veggies from the supermarket (see picture). This one comes in a 420g pack & you will only need half a pack to complete this recipe. Alternatively, you can use shredded carrot, wombok, green cabbage, broccoli stems, shallots & red cabbage or veggies of choice. Depending on what veggies you use, cooking time may vary.

You can soak vermicelli in warm or cold water. It is a lot faster with warm water but you must take care not to over soak the noodles which can cause it to break while cooking. If using warm water, rinse with cold water to stop it from softening further

If done correctly, there should be no shredding or food stuck on the bottom of the bowl. The wetness & softness of the noodles can affect this

    I do not get what it means when it says to add seasoning on top of the noodles. What seasoning? I have just made it and added the soy sauce and what not but has to add more because it didnt have enough flavour for me. Also didnt stir properly and the top was cold. What can I add to make it not so dry? I am still learning. Think I will be changing it if I am to make it again in future. I am a beginner and not long got my thermie. My chicken is shreaded and I followed it to a tee.

  • Very quick.  Needed stronger

    Very quick.  Needed stronger flavour, perhaps ginger or chilli. I found that when you added the vermicelli and then the frozen verges I had to keep stopping and stirring the mixture as the top was still cold. This resulted in the vermicelli being munched up a lot and the chicken to shred.

    I made this for dinner. I thought it needed a bit more sauce but my husband liked it as it was. I will make it again. Quick and easy. Who needs takeaway when you have easy recipes such as this?

    HI Justine, Glad to hear you enjoyed the dish. Try soaking the noodles for less time as maybe the noodles were a bit too soft which can cause it to shred. Cheers
