Parmesan and Prosciutto meatballs

Ingredients

6 portion(s)

Meatballs

  • 50 grams bread
  • 80 grams Fresh Parmesan, cut into cubes
  • 750 grams lean beef cut into cubes, (ideally part frozen)
  • 1 onion, halved
  • 1 clove garlic
  • 20 grams olive oil
  • 1 large handful fresh basi
  • 1 small bunch fresh parsley
  • few sprigs fresh oregano
  • 100 grams prosciutto
  • finely grated zest of 1 lemon
  • 1 egg

Tomato sauce

  • 1 large handful basil
  • 1 onion, halved
  • 1 clove garlic
  • 20 grams olive oil
  • 400 gram Can of chopped tomatoes
  • 400 grams tomato passatta
  • 1 tablespoon vegetable stock concentrate

Recipe's preparation

    Meatballs
  1. Place bread in bowl and blitz for 3 seconds on speed 8. Set a side

    Place parmesan in bowl and grate for 10 seconds on speed 9.  Set aside with the breadcrumbs

    Place basil, parsley and oregano in bowl and chop for 2 seconds on speed 6.  Set aside with breadcrumbs and parmesan

    Mince beef in 250g batches by placing in closed lid position and turbo 3-4 times.  Set aside

    Place onion and garlic in bowl and chop for 3 seconds on speed 7

    Add oil and sauté for 3 minutes varoma temperature speed 1

    Add prosciutto and chop for 5 seconds on speed 5

    Add meat, lemon zest, egg, breadcrumbs, cheese and herbs and mix for 20 seconds, reverse, speed 4 with the assistance of your spatula to ensure all the ingredients are combined

    With slightly damp hands shape into walnut sized balls

    Place meatballs into the Varoma

  2. Tomato Sauce
  3. Place basil in bowl and chop for 2 seconds on speed 6.  Set aside

    Place onion and garlic in bowl and chop for 3 seconds on speed 7

    Add oil and sauté for 3 minutes varoma temperature speed 1

    Add tomatoes, passata, vegetable stock and reserved basil

    Place the varoma into position and cook for 30 minutes Varoma temperature speed 2

    Once cooked place meatballs into thermoserver and pour sauce over.

    Cook spaghetti according to instructions in the Every Day Cookbook and serve

Tip

I have also done this recipe replacing the prosciutto with bacon and it works equally well.  Also you can just use two tins of tomatoes instead of the passata, I added a tablespoon of tomato paste.

I just love doing meatballs in the Varoma as they stay so lovely and moist and you don’t have to stand there turning them in a fry pan, and they definitely won’t burn.

    Delicious sauce and yummy flavours in the meatballs, didn't mince the meat enough so was a little chewy. Might use actual mince next time instead tmrc_emoticons.)

    Very nice meatballs & sauce.  I used bacon instead off prosciutto which worked fine.   I used half a lemon rind, which was enough.  Kids polished it all, which is great tmrc_emoticons.) thank you

    Fantastic! I somehow managed to cook this in a motel room in remote country Victoria. So wonderful to sit and relax in the room while a delish meal cooked away. 

    The meatballs were perfectly cooked with loads of flavour and held together well once cooked. Tasty sauce too. I used salami instead of prosciutto, dried oregano and Coles 'Pure' GF bread rolls as they were items I had with me. 

    This dish is going on the favs list for when we get home.

    Absolutely devine !! Forgot I didnt have eggs, so just added extra olive oil  came out a treat.
