The Perfect Lasagne

Ingredients

Meat sauce

  • 1 onion
  • 2 cloves garlic
  • 2 carrots
  • 60 grams pumpkin
  • 1 sweet potato
  • 30 grams oil
  • 500 grams minced meat
  • 800 grams chopped tomato, canned
  • 30 grams tomato paste
  • 1 tsp salt
  • 1 tablespoon veg stock
  • 2 tsp sugar
  • 2 tsp oregano, dried

Bechamel sauce

  • 50 grams Butter
  • 80 grams flour
  • 600 grams Milk
  • 1.5 tsp salt

Other

  • 150 g cheese, Mix of Tasty and Parmesan
  • Wholemeal Lasagna Sheets

Recipe's preparation

  1. Grate cheese 10 sec / Spd 8 & set aside.
  2. Meat sauce
  3. Chop carrots, onion, sweet potato, pumpkin & garlic cloves 5 sec / Spd 5, scrape down sides and chop another 5 sec / Spd 5.Add oil & sauté 2 min / Varoma / Spd 1.Preheat oven to 200° C.Add meat & cook 5 min. / Varoma / Gentle stir setting / Counter-clockwise operation.Drain out excess liquid from Thermo bowl.Add tomatoes, tomato paste, salt, stock cube, sugar & oregano and cook 12 min / 100° / Counter-clockwise operation / Spd 1-2.Pour into Thermoserver/bowl (doesn't need to stay warm) & rinse out Thermo bowl.

  4. Bechamel sauce
  5. Melt butter for 2 min / 100 ° / Spd 1.Add flour & cook for 1 min / 100 ° / Spd 1.Add milk & salt, scrape flour mixture from bottom through milk & mix for 2 sec / Spd 5 to combine. Cook for 8 min / 100 ° / Spd 2. Check that all flour combined by scraping again with spatula, then briefly mix again for 2 sec / Spd 5.

  6. Layering
  7. Spread some bechamel sauce in the bottom of a baking dish, line with lasagne sheets, top with bechamel again, sprinkle some cheese and then start layering meat, lasagne sheets, bechamel, cheese until top of dish is reached. Generously sprinkle cheese on top layer.

  8. Bake In the preheated oven for 30 minutes. Lasagne is done when a toothpick easily pierces through the layers and the cheese is nicely browned.Enjoy!

    Smile YUMMO!! Thank you... I made this recipe last week using Gluten Free ingredients, & it was sensational!! It really is the perfect lasagne. It was recommended to me from a friend, and I changed it up to suit my daughter and I being Gluten Free due to Coeliac Disease. My 5 year old loved it!! She says I'm the best cook in the whole world after this dinner, lol

    I made my own lamb mince for it using my thermomix too from lamb offcuts. And I highly recommend those lasagne type alfoil trays to bake them in (i purchase them from woolies) and they are handy for when I'm taking our lasagne camping or to a bbq or family feast. Easily freezes & reheats too.

    10/10 A+++

    Loved all the secret veg in this! I personally cooked the mixture for 20 minutes instead of 12 after adding the tomatoes stock cubes etc. But perhaps I didnt grate the Sweet potato fine enough (I used raw sweet potato) Didnt have pumpkin so just used extra sweet potato. I used the cookidoo bechamel just for guided cooking because im new to thermos. I also didnt use meat just cooked mushrooms instead for a vego version - everyone loved it!! Made a great lasagne, thanks wendy62 will make this again for sure.

    For those that have been having trouble with dish size, I've been making this for years and find the large Maxwell & Williams lasagne dish (35 x 24cm) is the right size - even with the extra bechamel sauce I find it needs.

    This really lives up to the title. Perfect indeed! Made 1.5 times the sauce as per some of the comments and did not need it. It went to waste, but I did have a bit of left over meat which I froze. S I guess it depends on the size dish you use. I used a typical white cermaic lasagne dish 30 x 18cm. Hubby loved this too and it was even better the next day!! Thanks for the recipe, love all the extra veges. Think I might add some baby spinach next time too.

    The recipe has replaced my mums recipe that I have loved all my life. The veggies give the sauce soo much flavour. Next time I could easily add more veggies to make the mince sauce go further as I use a large dish.

    Absolutely love this recipie. Have made it twice, the first time with the exact ingredience and the second time with just random vegies I had in the fridge - worked just as well! Both times had quite a bit of left overs though so use a large dish if you have one.

    I'm yet to taste this lasagne, it's currently in the oven cooking. My carrots must have been a little large, as it wasn't stirring it very well? So I added extra time and turned it up to speed 2 for the sauté step and once I added the meat.
    It'd be great if a size for the baking dish was specified as well, as I had quite a bit of leftovers.

    Loved the ‘hidden’ veggies in this dish. Didn’t have a can of crushed tomatoes, so used a bottle of taco sauce - Gotta get creative when caravanning ! Turned out well although I should have read the comments & increased the bechamel sauce.

    Absolutely delicious!

    I didnt drain rain the excess liquid after adding the mince, and it was perfect. I think it would have been too dry otherwise.

    As others suggested, I did 1.5 of the Bechemel sauce. It came out really runny, so I ended up heating it in a saucepan on the stove to thicken it up.

    I’ll be making this again for sure!

    I made this today. Loved it. I could hide all sorts of vegetables in it and the family didn't even know. I omitted the cans of tomatoes and added 1 x tomato passata instead. I also cooked the carrots, etc for a couple more minutes longer to make sure they were soft. I added celery, carrot, and butternut pumpkin to my lasagne. I didn't have a sweet potato, so just added more of the pumpkin. I used a different bechamel sauce though.

    Wow what a delicious lasagne! I used butternut pumpkin instead of sweet potato, cooked the veg mix for a minute longer (in the first attempt the carrot bits were still a bit crunchy) and added some extra italian herbs for an extra bit of flavour. The Bechamel sauce was perfect! My dinner guests loved it and it was with great reluctance that I let them take leftovers home with them. Tongue

    The Perfect Lasagna definitely lived up to its name!!!
    My husband who puts BBQ sauce on everything didn't put sauce on this. I followered the recipe as closely as possible (except tipping extra liquid out) I questioned the 60 grams of pumpkin because it's such a small amount so I ended up roasting the extra pumpkin and serving it with dinner. It took me one hour to make. Then 30 minutes cooking time in the oven then I let it sit for about 20min before serving. I used one packet of Aldi Lasagna sheets which only gave me 3 layers. I'll definitely be making this again!

    I'm not usually a fan of mince lasagne - too rich & heavy - but this version is super delicious and I loved that it was packed full of veges that added so much flavour without the kids even knowing they were there! I added a small jar of pasta sauce as I only had 1 tin of tomatoes and no paste. I also swapped some of the milk for white wine in the sauce as I like the flavour it gives and used plain supermarket fresh pasta sheets.
