Rachel's Beef, Lime & Peanut Curry

  • 1000g stewing beef cubed
  • 800g coconut milk
  • juice of 2 limes, or to taste

Curry Paste

  • 2 tablespoons Corriander Seeds
  • 1 teaspoon cumin seeds
  • seeds from 6 cardamon pods
  • 1/2 whole nutmeg
  • 1/2 teaspoon ground cinnamon
  • 4 teaspoons paprika
  • rind from 1 mandarin
  • 4-5 fresh red chillis, deseeded
  • 5 teaspoons sugar raw
  • 1 tablespoon stock concentrade, (can use beef of vegetable)
  • 10cm fresh lemongrass, white part only, roughly chopped
  • 3 cloves garlic
  • 2cm piece of galangal, or fresh ginger
  • 1 red onion
  • 1 piece shrimp paste, 2cm square
  • 50g fresh coriander roots & stems
  • Juice of 1/2 Lime
  • 2 level tablespoons oil, your choice
  • 2 heaped tablespoons peanuts
  • 1 teaspoon tumeric powder, or fresh root

Recipe's preparation

    Rachel's Beef, Lime & Peanut Curry
  1. To make the curry paste place all the whole spices into the TM bowl & heat for 2 mins, 100 degrees speed 1. Chop for 2 mins speed 10. Add the remaining curry paste ingredients & chop for 30 secs speed 10, you may need to stop halfway & scrape down the bowl. Cook for 5 mins varoma temperature speed 1. add the meat & cook for 10 mins 100 degrees Counter-clockwise operationspeedGentle stir setting. Then add the coconut milk & cook 60 mins 100 degrees Counter-clockwise operationspeedGentle stir setting. By this time the meat should be really tender & delicious. Stir in lime juice to taste.

Tip

I have changed Rachel's orginal recipe slightly.

I also love adding extra veg like sweet potato after 1/2hr & peas in the last 5 mins of cooking.

  • Lovely fragrant Thai style

    Lovely fragrant Thai style curry, halved recipe without any issues and added a tsp of Tamarind paste.  Made in TM5 with no adjustments to recipe and it came out very well, although meat cubes were so tender they were falling apart.  Last step should be done in reverse also.  Loved this curry and healthy too!

    This is my first review so far.  I'm leaving it because my husband is raving and my 3yo is licking the drips off her placemat.  I only used one red chilli and one green one in the sauce so not chilli-y at all, but fabulous anyway!
