Red Thai Duck Curry

  • 1/4 Pineapple, peeled and cut into 2cm pieces
  • 400ml can coconut milk
  • 35 g red curry paste
  • 2 spring onions, chopped
  • 3 Kaffir lime leaves
  • 1 japanese eggplant, chopped into 2cm pieces
  • 2 duck marylands, boned with skin and fat removed, cut into 2cm pieces
  • 250 g cherry tomatoes
  • 10 g fish sauce
  • 20 g palm or brown sugar
  • 1/4 cup thai basil or basil leaves, to garnish
  • steamed jasmine rice, to serve

Recipe's preparation

    red thai duck curry
  1. Put curry paste and 80g of coconut milk into the mixing bowl and cook

    2 mins/Varoma/speed 1

     

    Add remaining coconut milk and lime leaves and cook 6 mins/100°C/Counter-clockwise operation/Gentle stir setting

     

    Add duck, spring onion, eggplant, tomatoes and pineapple and cook

    8 mins/100°C/Counter-clockwise operation/speed 1

     

    Add sugar and fish sauce and cook 4 mins/Varoma/Counter-clockwise operation/speed 1

     

     

    Serve on jasmine rice with basil leaves to garnish.

    Mine turned to mush, but it still tasted lovely. Next time I'll adjust the recipe's timing so that the main ingredients aren't in for so long.

  • Flavour of the sauce was

    Flavour of the sauce was fabulous. But my tomatoes dissapeared, my pineapple half dissappeared. I wouuld add these halfway through at least so they stayed together.

  • I used chicken instead of

    I used chicken instead of duck as I was unable to get it this week. My meat also shredded, but in saying that was quite nice still. If I do use duck though I think I will cook it separately and add myself. Tomatoes also pretty much disappeared into sauce.

    Overall good flavour. Next time I would increase the amount of duck and maybe decrease the pineapple (but I think I put in too much).

    My duck didn't turn to puree but it still could have been increased, probably nearly doubled, but then we like to eat the duck tmrc_emoticons.)

    I also found it really hard to source the ingredients

    My only suggestion would be to add the cooked duck right at the end and mix it through yourself. My duck turned to puree but besides that was a great tasting dish.
