Saag Gosht - Mild Lamb Curry (Paleo, Gluten-free, Dairy-free, Egg-free,)

Ingredients

Sauce:

  • 500 g diced lamb
  • 1 heaped teaspoon Fenugreek seeds
  • 1 heaped teaspoon coriander seeds
  • 1 heaped teaspoon cumin seeds
  • 1 Packet frozen spinach leaves, (defrosted)
  • 1 red chilli, (optional)
  • 1 tsp turmeric
  • 1 tsp Garam Masala (Everyday Cookbook)
  • 1 brown onion, Quartered
  • 3cm Peice ginger, Quartered
  • 3 cloves garlic, Shelled

Cont.

  • 20 g Evoo
  • 150 g Cashews
  • 3 tomatoes, Quartered
  • 300 g water
  • 1 tablespoon EDC vege stock
  • 1 bunch fresh coriander
  • 1 level tsp salt, (I leave this out)
  • 1 lemon, Juiced

Recipe's preparation

    Making the dish:
  1. 1. Add Cummin, Coriander and Fenugreek seeds to TM bowl and roast for2mins, 100 deg, speed 1, then mill for 2 mins, speed 8.  Set aside in a bowl.

     

    2. Add ginger, onion, chilli and garlic to TM bowl and chop for 5 sec on speed 6, then scrape down sides.

     

    3. Add milled spices, garam masala, tumeric and oil to TM bowl and saute for4 mins, 100 deg, speed 1.

     

    4. Take defrosted spinach from packet and wring out any moisture.

     

    5. Add drained spinach, cashews, tomatoes, water, stock, salt, coriander and puree for 1 min, speed 8.

     

    6. Add lamb and cook for 1 hr, 100 deg, Counter-clockwise operation, speed 1.

     

    7. Add juice from the lemon and stir through.

Tip

- I've used a mix of almonds and macadamias when I couldn't get cashews

 

- Serve with Cauli "rice" or mixed steamed veg

    simple, tasty curry - different by execution than my usual curries. For a person who dislikes spinach that's high praise. I ended up combining the veg/aromatics together with the raw lamb, then put it into a dutch oven and cooked at 125 degrees for 1 1/2 hours.

    I rarely comment on recipes but this one was a BIG winner - with family and in office leftovers - many comments received on the great aroma. Only point is there is more sauce to meat ratio so I will up the later next time.

    Really yummy recipe. I used 400gm can tomatoes for extra flavour instead of fresh tomatoes plus I added a table spoon of tomato paste and used 300gm of spinach and it was perfect! I also used 800gms of lamb but didn't increase other ingredients and still had extra sauce. My husband also loved it, will definitely be a regular on our dinner menu.

    Delicious, and it works with any meat, not just lamb.  And I find I can play around with the ingredients, such as peanuts and almonds instead of cashews; tomato passata instead of fresh tomato, and it still works.  i add a bunch of chopped coriander towards the end of cooking rather than before adding the meat, and you get all the flavour as well as some texture.

    Delish! Great meal. Love the colour of it.  Added extra herbs from our herb pot including basil, parsley and rosemary.  Added to the already great flavour. Saved as a fave. Won't be buying this as a take-out ever again.

    Soo yummy! My husband loves it, better then most takeout versions we've tried  tmrc_emoticons.) His meal request if given a choice!  tmrc_emoticons.;) I've only ever made it with diced chicken rather then lamb as we're not big lamb eaters. The fresh coriander just makes it! we love to add diced mushroom at the same time as the meat (so it's not pureed!) We usually stick with around 500g of meat and with the mushrooms it's plenty! Enough for 2+ meals for us two! We serve it with rice and pappadums or naan bread.

    Love it! I make it as a chicken saag though - change out the lamb for diced chicken thigh or breast - and in step 6 cook for 20minutes insteas of 1hr. Love to add some sliced mushroom too in at the same stage as the chicken. Hubby loves it too! and he can be particular  tmrc_emoticons.)

    Fantastic, loved it. Excluded the fenugreek as I didn't have any and the lemon juice and chilli, but thoroughly enjoyed what was left. Only cooked for 35mins but still very tender lamb.

    Great recipe.  Lots of sauce, so might add more meat or other veggies next time to make it last 2 family meals.  Very easy.  Didn't have fenugreek seeds and added chilli. Will definitely make again.

    This was the first dish I made in my Thermomix and we all loved it! It smells amazing while you're making it. I was surprised that the meat came out so well. And the flavours really enhanced so the leftovers the next day were sensational. I'm going to definitely make this one again. The sauce is quite filling, so it's enough just to have this with some naan.

    I too had to search for the rest of the ingredients. It was worth it though! Very tasty!! When I make it next, I will double the chilli and add a little more water so that there's more gravy to it. I made cauliflower wraps to go with... not quite naan bread but at least the cauliflower wraps are paleo!

    Made this tonight.  Was disappointed to find the ingredients list incomplete but luckily I had the rest in the cupboard/fridge anyway.  Wasn't sure what amounts to add so just added bit by bit and tasted as it cooked.  Needed to add salt.  Boyfriend loved it!!  It's a winner in this house.

    One of the best curry's we've ever had.  Smells amazing when it's cooking.  We made the sauce in the thermie, then seared lamb on the cooktop, topped with the curry sauce & cooked it in the oven for an hour.  Served with coconut rice.  Amazing!
