Sally's Satay Chicken

Ingredients

6 portion(s)

Satay Sauce

  • 1/4 teaspoon fennel seeds
  • 1/4 teaspoon cumin seeds
  • 1/2 teaspoon coriander seeds
  • 1 tablespoon tumeric ground
  • 3 clove garlic
  • 1 red chilli, (seeds optional)
  • 2 tablespoon light soy sauce
  • 2 tablespoon oyster sauce
  • 2 tablespoon sugar
  • 2 tablespoon olive oil
  • 1 can coconut milk
  • 3 heaped tablespoon crunchy peanut butter
  • pinch salt

Chicken Stirfry

  • 600 gram Chicken Thigh Diced
  • 2 carrots
  • broccoli
  • cauliflower
  • 1 cup frozen peas
  • Any other veggies of choice
  • 400 g Basmati or Jasmine rice

Recipe's preparation

    Sauce
  1. Place all dry spices and salt in the TM Bowl Mill for 1 min | speed 10
  2. Place garlic and chilli in the bowl and chop for 8 secs | speed 7
  3. Add remaining sauce ingredients and milled spices, cook for 5 mins | 90deg | speed 2
  4. Once cooked blend up - 30 sec | speed 10.
  5. Set aside in thermoserver
  6. Chicken Stir Fry and Rice
  7. Add required amount of rice to basket. With the veggies and sliced chicken in the varoma. Place chicken in the bottom of Varoma and vegies in the top. Cook 12 - 16 mins on Varoma temp, speed 2, stopping after 8 mins to stir chicken.

    (yes save time and cook all together, rice, chicken and veggies)
  8. If rice is cooked, remove and set aside in Thermoserver.
  9. Contine to cook chicken for a further 5 minutes, until cooked.
  10. Finally place all chicken, veggies with sauce in TM and cook 100 deg Counter-clockwise operationGentle stir setting for 5 mins.

    DELICIOUS! Thanks - for the rice, I added water to about 900L and cooked for 16 mins on Varoma. I'll definitely make this again. I also added a sliced onion, cooked on the stove with the chicken, and added some raw cashews just before the last 5 mins cook. YUM!

    I've given 4 stars because the sauce was so delicious. I added a large red chilli with the seeds and it was way too spicy for me so I'll leave the seeds out next time. The instructions are missing the water for the rice and my chicken and veg took way longer than the recipe said to cook. When I make it again I'll cook the rice separately

    This is a nice satay.

    I added extra chili, extra TBS peanut butter and used chicken breast and fresh veggies. Rice is the clever low GI rice.

    And for those asking about how to cook the rice, this is what I did in my TM31.

    Made the sauce as per the recipe instructions, set aside.

    Filled TMX Closed lid with 900gm water, added rinsed rice (400gm) to the Closed lid. Added vermoa (big one filled with fresh veggies - broccoli, mishrooms, onions and capsicums. Top tray filled with thin sliced chicken breast).

    Cooked for 14 minutes varoma speed 4. Removed rice as it was cooked, stirred veggies. Added chicken which was not fully cooked to thermie bowl (with butterfly in) added reserved sauce and replaced veggies on tmx, cooked varoma soft speed Gentle stir setting reverse Counter-clockwise operation for five minutes.

    All perfect.

    This quantity made enough sauce for 2 dinners.
    I also blitzed my own peanut butter instead of store brought stuff.
    Was absolutely delish. My 8 yo went back for 2nds.
    It will be made again at my house.

    Great recipe thanks. I added two small chillies so it had a little bite. loved cooking the whole meal in the bowl and varoma. I wasn’t sure how long to cook the rice for, it actually took longer than the meal so next time I would add the chicken and veggies a bit later. Beautiful flavour.

    This was delicious! I halved the curry powder to keep the kids happy, could even get away with not using the curry powder at all. I was also very generous with the peanutbutter because, well, peanutbutter is life. I just arrived home looking forward to leftovers and found my Dad had finished it off because 'he couldn't stop eating it'. So yum!

    I agree with the majority of comments that the sauce is very tasty. I read through a lot of the comments before starting this recipe. As there was no mention of water to cook the rice and others seemed confused by the recipe i decided that once the satay sauce was made and in the thermo server that I would use The Basic Cook Book recipe chip for boiled rice and just add the varoma on top with all the veggies in it (didn't need chicken as we are vegan).

    Then once the rice was cooked and the veggies half steamed I gave the veggies a quick toss in the wok.

    I have stored the excess sauce, rice and veggies in 3 separate containers in the fridge for us to eat the leftovers tomorrow.

    Wish I'd read the comments before I chose this for dinner.
    Instructions are extremly poor and don't make sense.
    I've ended up making a tasty sauce in Thermomix, but after trying to cook chicken and rice. 40 mins later every which way as the instructions are not working correctly, I'm cooking rice and chicken and veggies on the stove.

    Please can the author step up and address the multitude of comments from people asking for clearer instructions? I have obviously missed a trick in the instructions, but can't figure it out as I have followed the steps carefully. All I know is I'm hungry. Kids are hungry. Husband's hungry. We're cooking dinner on the stove. HELP!

    The flavours were nice, very runny sauce (which was great on rice and I did use lite coconut cream). I did have to put all chicken and veggies in the bowl to cook through as they were taking a really long time in the Varoma. Will omit peas next time, only thing that stood out as being a little out of place. Only used broccoli and carrot which was nice.

    Only made the sauce portion of the dish, using the wok for the chicken and vegetables. Absolutely loved it! I liked that it was runny, as it helps soak into the rice. Personally I think this is how stir fry satay sauce should be. Satay dipping sauce on the other hand should be thicker. So if you’re after a stir fry sauce this is perfect! 👌🏼
