Spicy BBQ Chicken (all-in-one)

Ingredients

BBQ Sauce

  • 4 cloves garlic
  • 160 grams tomato sauce, tomato rich i.e. Rosella
  • 120 grams apple cider vinegar
  • 60 grams Butter
  • 4 teaspoons Dijon mustard
  • 4 tablespoons tamari
  • 4 tablespoons lemon juice
  • 30 grams honey
  • 1 teaspoon TM veggie stock concentrate
  • 1-2 teaspoon chilli powder, to taste
  • 1 tablespoon smoked paprika
  • 2 tablespoons cornflour, mixed with 2 tablespoons of water

1 kg Chicken Thigh

Veggies

  • 900 grams water
  • 350 grams quinoa
  • cubed fresh mixed veggies or mixed frozen veggies, to fill Varoma base

Recipe's preparation

    BBQ Sauce
  1. Mince garlic in TM Bowl, 3 secs, Speed 7.

  2. Add remaining ingredients for the sauce except cornflour and Mix for 10 secs, Speed 5.

  3. Pour sauce over chicken in a bowl and marinate for 30 mins.

  4. Chicken and Veggies
  5. Pour water into TM Bowl and insert the Rice Basket with quinoa.

  6. Put lid on TM Bowl with Varoma on top. Add fresh or frozen veggies to lower tray and place upper tray on top. Line with pre-crumpled, wet baking paper and arrange chicken on top. Drizzle with a little sauce. Set aside remaing BBQ sauce for later.

  7. Cook 20 mins, Varoma temp, Speed 2. Once done, lift Varoma and pour cooked veggies and quinoa in basket into the Thermoserver.

  8. Add some more liquid to the TM Bowl by carefully draining the juices off the chicken. Add reserved BBQ sauce. Replace lid and Varoma and cook for another 10 mins, Varoma, Speed 2. Chicken should be cooked. If not fully cooked, flip chicken thighs and cook for additional 5 minutes.

  9. Remove cooked chicken to serving dish. Finish sauce by adding cornflour mixture to bowl and cookfor 4 mins, 100, Speed 4, MC in place.

  10. Serve, drizzled in sauce with quinoa and veggies on side.

Tip

If using fresh veggies, you will need to add more liquid in the 8th step.

    Yum! We bought too much chicken and had to make two batches, but it was easy enough to add water in the jug and cook the rest of the chicken while we sat down to eat.

    We will definitely make again tmrc_emoticons.)
