chichen marinade
- 1 heaped teaspoon cumin, ground
- 1 heaped teaspoon corriander ground
- 1 heaped teaspoon paprika, sweet
- 0.5 teaspoon chilli flakes
- 1 heaped teaspoon sea salt flakes
- 1 heaped tablespoons olive oil
Tomato sauce
- 400 grams tomatoes, quartered or use can tomato
- 1 heaped tablespoons TM vegie stock
- 150 grams water
vegetables
- 500 grams sweet potato / pumpkin, cut in 1-2cm pieces
- 100 grams Baby Spinach Leaves
- 200 grams 1-2cm cubed potatoes
Chicken and Speck
- 1000 grams chicken thighs, cut in 2 cm pieces
- 200 grams Speck or thick bacon pieces

Recipe's preparation
1/ Mix marinade ingredients together. 2/ Add chicken and Speck and coat in marinade. leave to marinade for at least an hour
3/ Layer sweet potato in Varoma dish and Chicken/ Speck on top of sweet potato. The remainder of chicken is placed on varoma tray leaving enough space in the base for steam to move through the Varoma. 4/ In the bowl add the veggie stock concentrate, water and crushed tomatoes. if using fresh tomato, blend tomato for 10 seconds on speed 7
Place potato in basket and add to bowl. 5/ Cook for 35 minutes, speed 1 at Varoma Temp. Checking and stirring the Chicken and sweet potato a couple of times 6/ When cooked, tip Potatoes on platter over bed of baby spinach leaves add chicken and sweet potato.
Pour condensed Tomato sauce over the top of everything.

So Glad you liked it Im glad you workd out a way to do it with Rice and Quinoa. I used to do it with Rice but found it didnt cook properly plus My husband isnt a fan of rice and loves potato. My family always askfor this one too I actually use the Cathy's 3 C's Spice mix instead of the ground cummin and corriander, which is on the community too. Have a go mixing some up and you can use it for all sorts of things :0 it has a couple of freshly ground cinnamon sticks in it too. Much better when using freshly ground spices

Cooked this with rice mixed
Cooked this with rice mixed with quinoa instead of potato in the basket, so I increased the tomato sauce recipe by around 50% (600g tomato, 250g water and a bit over 1 heaped tbsp of stock concentrate). Also I increased the cooking time to 45min. The result was a beautiful dish with incredibly flavoursome tomato rice... Can't wait to make this dish again. Hubby kept on goshing about how yummy it was! And even better is it's a large dish so for a family of 4 including 2 young kids there was enough leftover for a few more meals. It could have easily fed a much larger family.

Try reducing the amount of water in the bottom or add a bit of corn flour to the sauce and cooking for a few minutes on 90 degrees speed 4 for 3 minutes.

Thanks Sweet Chilli, i used to do this with rice in the basket instead of potato but as you found out it takes a little longer to cook as the tomato blocks the holes to the rice. its really good with tomato rice though. i would usually cook and stir cook and stir the rice and then just throw it in the thermoserver and it would carry on cooking in there. it was a bit complecated for peole on the forum who need direct instructions but if you use your common sense and imagination you can do all sorts

I can recommend this but removed chilli due to being a family feed for the little ones too. Very tasty and easy to make. Would be tastier if marinaded a little longer (ovvernight) as the flavours obviously infuse further with time - the leftovers the following day were great!

yes you can use whatever you like. You can ommit the bacon or speck if you like. i just had some speck one night and added it to this dish and it was delicious. it is a little harder to find. i get it from my butcher. it has such a wonderful flavour.
