Sweet and sour curried mince

Ingredients

4 portion(s)

Veggie preparation

  • 1 onion, Halved
  • 1 carrot, Peeled and roughly chopped
  • 1 apple, Peeled and cut into 1/4s
  • 1/2 red capsicum, Roughly chopped
  • 1 zucchini, Roughly chopped
  • 1 heaped tbsp Curry powder. Use more or less to taste. I use Keens brand
  • 20 g Coconut or preferred oil
  • 1 x half 440g can Crushed or diced tomatoes, 1/2 can only. Freeze the rest in a suitable container
  • 40 grams vinegar
  • 20 grams brown sugar
  • 440g can crushed pineapple in juice, Drained. Save juice and fruit separately
  • 2 teaspoon TMX veggie stock, or chicken
  • 500 grams Beef, chicken or pork mince
  • 250 grams water
  • 1 heaped tablespoon cornflour, Dissolved in 2 tablespoons water, if need to thicken

Recipe's preparation

  1. Put peeled and halved onion, carrot, Apple, red capsicum, zucchini intoClosed lid.


    Chop sp4 /10 seconds


    Add oil and curry powder and sauté Counter-clockwise operationon Varoma sp 5 mins.

    Add juice from pineapple and all other ingredients except mince, pineapple pieces and cornflour slurry.


    *By cooking the mince this way, you won't get a "purée" of mince...*

    Place meat in simmer basket, break up lumps.

    Immerse basket into Closed lid.

    Cook 20 mins on Varoma sp 2 Counter-clockwise operation. Lower temp to 100 if boiling too quickly. It may take less for some mince e.g chicken or pork.

    Every now and then break up the mince lumps in the basket using your spatula.

    When cooked, carefully drain mince , leaving it in the basket, and set aside.

    Stir reserved pineapple pieces through the Closed lidusing your spatula.

    Stir meat mixture intoClosed lid, using the spatula.

    Add cornflour slurry if required, and cook 100°C/2 mins/Counter-clockwise operation/sp2, until thickened.

    Test for seasonings.

    Tip into a thermoserver, wash bowl and cook rice or mash to serve.

Tip

This is a great way to incorporate veggies into a family meal.

These veggies are just a suggestion.

Use whatever you fancy or have on hand.

Youcan also add a sachet of Chicken noodle soup and omit the tblspn veg stock too.

    This dish has a wonderful taste - it's really yummy. Would be perfect with a serve of rice. However please remove the water - it makes the dish too soupy/watery, even with the cornflour slurry added. Well done; love the addition of vegies!

    Not a bad dish, but think it needs tweaking a bit. The addition of a moderate amount of salt helped the balance a bit - think it should be added in earlier.

    This was delicious!  I put it on for 10 minutes, then added some frozen peas and corn as I didn't have zucchini, then stirred the chicken and put it all back on for another 10 mins.  Then put the chicken into the thermosaver with the pineapple while I added the cornflour to the sauce and cooked it for another 3 minutes so it thickened nicely.  Then poured that over the chicken and pineapple and stirred it in the thermosaver.

    My only question was where it says dd oil and sauté counter-clockwise operationon Varoma sp 5 mins.  Add curry powder.

    Saute on Varoma counter-clockwise operation, sp 1. as the first part doesn't say the speed and the second doesn't say how long, so I just went with 2 minutes for sauteing the curry powder.

    Great recipe, will definitely make it again!

    I only added 200 g Water & when finished I let it sit in the Thermoserver and added some cooked brown rice to soak up the juice and flavour.  Thank you for sharing

    Made this last night for the grandkids and their parents.   All good. I note that the recipe says to put all of the ingredients in except the mince at the same time as adding the pineapple juice.  Later on in the recipie there is a step to add the pineapple pieces.  Having followed the directions earlier on in the recipe I did not have any pineapple pieces to add. 

    I think that there needs to be a note included in this step:  "Add juice from pineapple and all oother ingredients except mince.' so that it reads like this, "Add juice from pineapple and all other ingredients except the pineapple pieces and mince."  Other than that the recipe works well and we will be cooking it again.   Suggest using peas instead of capsicum if that is not available.I will also work on reducing the amount of liquid that is left at the end of the cooking, noting that the thickening needs to be added at the end.

  • I found that there was a lot

    I found that there was a lot of liquid but had not used the cornflour in the cooking.  Cornflour or potato flour will be used next time and that will thicken up the sauce nicely.  The only alternative from my point of view would be to simmer the mix for some time, but that defeats the benefit of using the thermie.  The upside is that the dish becomes much richer.

    Thanks for your nice comment. The recipe does state to add a heaped Tablespoon of curry powder, so I'm not surprised you couldn't taste a heaped teaspoon... tmrc_emoticons.;)

    Thank you Monica for this recipe.  It looks just like the picture.  Very, Very tasty.  I used minced lamb as it was all I had.  My husband and I don't like curry hot, so I used 1 teaspoon of the Keens and it is perfect. A very generous 4 serves. The only thing I would do would make it a little thicker - it is more like a chowder.  But that is my personal taste. Exellent idea to do the meat in the basket.
