Thai Stirfry - Chicken, Chilli and Basil

Ingredients

Chicken Stirfry

  • 2 clove garlic
  • 1 onion
  • few shakes of chilli flakes
  • 30 gram canola oil
  • 1 level tablespoon light soy sauce
  • 2 level tablespoon fish sauce
  • 1 level teaspoon dark soy sauce
  • 1/2 level teaspoon brown sugar
  • 1 bunch fresh basil
  • 2-3 medium carrots - sliced lengthways, then cut into semi-circles
  • 800 grams Diced chicken thigh
  • 100 grams water
  • 2 teaspoons cornflour
  • half cup cold water

Steamed Vegetables

  • broccoli
  • green beans

Recipe's preparation

    Method
  1. 1 - In a seperate small bowl, add half cup cold water and mix with 2 teaspoons of cornflour. Set aside.

  2. 2. Add onion, garlic and chilli flakes, chop on speed 5 for 3 seconds. 

  3. 3 - Add oil, saute for 4 minutes at 100 degrees on Counter-clockwise operationGentle stir setting. Scrape down sides of bowl with spatula.

  4. 4 - Add chicken and all remaining ingredients (except cornflour mixture) and cook for 15 minutes at 100 degrees on Counter-clockwise operationGentle stir setting.

  5. 5 - Once you have set the chicken, add the broccoli to the bottom layer of the varoma basket and the green beans to to the top layer of the varoma basket. Sit on top of the TM bowl.

  6. 6 - Add cornflour and water mix, mix with spatula then continue to cook for 5 minutes at 100oC on Counter-clockwise operationGentle stir setting. (Place varoma back on top of Tm bowl to complete vegetables cooking)

  7. 7 - Serve with steamed rice.

Tip

Serve with steamed rice. Will serve 4-5 adults depending on serving size if served with rice and vegetables. Picture shown was one of five servings. I use about 10 shakes of the chilli flakes and it comes out medium in heat.

    Really really easy recipe to follow and quick too. I used 1 red chilli instead of chilli flakes and it was delicious. Great family recipe
