Truss Tomato and Lamb Spaghetti Bolognese (large family)

Ingredients

8 portion(s)

Mince

  • 1000 grams Lamb, Cubed and semi frozen
  • 5 --- garlic cloves, Peeled
  • 2 tablespoon Masterfoods Mixed Herbs
  • 1/2 --- brown onion

Spaghetti and Sauce

  • 160 grams Angel Hair Spaghetti
  • 500 grams Truss Tomatos, Quartered
  • 1 can Whole peeled tomatoes
  • 3 garlic cloves, Peeled
  • 1 and 1/2 onion
  • 2 tablespoon TMX vegetable stock concentrate
  • 1 zucchini, Roughly chopped
  • 40 g oil
  • 1 teaspoon paprika
  • 1 teaspoon Oregano
  • 1 teaspoon Nutmeg, Ground
  • 1 teaspoon raw sugar

Recipe's preparation

    Mince
  1. Place onion and garlic into jug and chop 3 seconds / speed 7.  Set aside. 

     

    Mince lamb in 250g batches by placing into jug and mincing 1-2 seconds / Closed lid / turbo.  Once all meat has been minced, return it all to the jug and add onion, garlic and mixed herbs.  Stir to combine and coat mince 6 seconds / Counter-clockwise operation / speed 3. 

     

    Place all the mince into the Varoma tray and Varoma bowl, spreading evenly and leaving gaps for the steam to coome through. 

     

  2. Sauce and Mince
  3. Place onion and garlic into jug and dice 3 seconds / speed 6.  Add oil and saute 3 minutes / varoma / speed 1. 

     

    Add zucchini and tinned and fresh tomato to jug and chop 6 seconds / speed 7. 

     

    Add TMX Vegetable stock concentrate and herbs, spices and sugar. 

     

    Set Varoma trays in place and steam 20 minutes / Varoma / speed 2.

     

    After 20 minutes, use the sharp cutting edge of your spatula to separate and stir the mince, cutting any large chunks down to size o ensure it is all cooked evenly. 

     

    Cook again for 5 minutes / varoma / speed 2 or until mince is thoroughly cooked. 

     

    Set mince aside in a ThermoServer. 

     

     

     

  4. Sauce and Spaghetti
  5. Place spaghetti into hole in lid where your MC would normally sit.  See photo for "how to".  

     

    Cook sauce and spaghetti for 3 minutes / 100 degrees / Counter-clockwise operation / speed 1, or until spaghetti has wilted and cooked. 

     

    Pour into another ThermoServer and serve with mince.
