Veal Parmigiana

Ingredients

4 portion(s)

Veal Schnitzel

  • 4 veal steaks
  • Salt and pepper
  • plain flour
  • 1 egg, whisked with 1 tbsp water
  • 30 gram Butter
  • 250 grams mozarella cubed, partially frozen
  • 60 grams Parmesan cheese, cubed
  • 4 pieces frozen bread, any sort
  • --- parsley, small handful

Sauce

  • 1 onion
  • 1 clove garlic
  • 1 red capsicum, quartered
  • 1 celery stalk
  • 400 gram 400g tin tomatoes
  • 170 grams water
  • 35 grams tomato paste
  • 20 grams vegetable stock concentrate
  • 1/2 tsp dried basil
  • 1 tsp raw sugar
  • Salt and pepper, to taste
  • 40 grams olive oil

Recipe's preparation

    Veal
  1. Pound veal thinly, remove any fat around edge.  Set aside.


    Add cheeses to TM bowl and mill for 5-7 seconds on speed 8.  Set aside


    Add bread to TM and mill for 10 seconds on speed 9.  Set aside.


    Toss veal in flour which is seasoned with salt and pepper, shake off excess and dip into the egg, then press on breadcrumbs.  Place in a rectangular oven
    dish and refrigerate veal while sauce is cooking.

  2. Sauce
  3. Place onion and garlic into TM bowl and chop for 3 seconds on speed 6.   Add capsicum, parsley and celery and chop for 3 seconds on speed 5.  Add oil and
    cook for
    3 minutes at 100C on speed 1.


    Add remaining sauce ingredients and cook for 20 minutes at 100C on speed 1.


     


     


     


     

  4. While sauce is cooking cook veal in a frypan with butter until browned and
    crisp on both sides.  Place veal in a rectangular dish.


    Pour sauce over veal and top with grated cheese.  Drizzle a little olive oil over
    the cheese and bake for 20-30 minutes until golden brown.


    Serve with a green salad.

    This was really tasty! I took others suggestions and reduced the amount of cheese.  It did make a lot of sauce, so I have frozen for next time.  Thanks for sharing

    Our family liked this.  I agree there was heap of sauce so I have frozen half, in anticipation of the next time we eat it.  Although I liked the idea in the comments section to use it with kids nuggets.

    Yum, really moreish tmrc_emoticons.) i only used about 90g of mozzeralla in the crumb mix, still very cheesy tmrc_emoticons.) i will freeze half the sauce and use chicken another time.  Thank you tmrc_emoticons.)

    I made this last night, but used veal snitzel pieces so halved the frying pan cooking time. 

    I found there was a lot of sauce so I have frozen half of what was made. There was also a lot of cheese so will remember for next time to use less. 

    All in all the sauce was awesome!!

    Only made the sauce, and it was fabulous. Hubby and I had it as a chicken Parma, and I had made cheesy chicken nuggets from EDC, and used theirs as mini parmas. Miss 5, who generally does not like nuggets ate 4, with the topping. Have divided the rest so will be having 3 more Parma nights off this batch. Thank you.

    Made this with chicken tonight and it was delicious!  This will be going into our recipe file and made again for sure.  We had it with a nice fresh garden salad with it and it was sooo much better than any pub meal I've ever had!
