Vietnamese Chicken Meatball & Noodle Soup

Ingredients

2 portion(s)

  • 1/2 tbsp vegetable oil
  • 1 clove garlic
  • 1/2 red chilli
  • 1 bunch coriander
  • 2 tsp ginger
  • 440 grams chicken stock
  • 340 grams water
  • 1 star anise
  • 1/2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 250 grams chicken, cubed
  • 2 spring onions
  • ground white pepper
  • 100 grams vermicelli noodles or angel hair pasta (optional)
  • 1 bunch pak choy
  • bean sprouts (garnish)

Recipe's preparation

  1. Place cubed chicken, spring onions, coriander, white pepper, 1 tsp ginger and ½ tbsp fish sauce into mixing bowl and press briefly 3 times/1 sec/Closed lid/Turbo.

  2. Form into meatballs and place into simmering basket.

  3. Add garlic, chilli and remaining ginger amd chop 3 sec/speed 7.

  4. Add oil and sauté 3 min/100C/speed 1.

  5. Add stock, water, star anise, brown sugar, soy sauce and ½ tbsp fish sauce and cook 4 min/90C/speed 1.

  6. Place simmering basket into mixing bowl and cook 4 min/100C/speed 1.

  7. Add noodles and pak choy to TM bowl. Place simmering basket on top and cook for a further 4 min/100C Counter-clockwise operation/speed 1. (I turned the meatballs for this part of the cooking).

    Souper dooper easy and OMGoodness! What a taste sensation! Did a double batch of meatballs and cooked them in the oven, used silverbeet instead of bok choi and cooked the bean thread (lower carb) noodles in hot water off to the side. Added a kaffir lime leaf like someone suggested and dried shikake mushrooms because I had some left over to use.
    I swear my tastebuds heard angels singing! Big Smile

    I made this 1 day ago and it was so delicious! I must admit that I like my chillies and ginger - so doubled the stated quantities, this resulted in and almost Pho style taste. Also, I increased the amount of stock and increased the cooking time. Watch out for the star anise when serving. This will definitely be a staple favourite!!!!

    This soup was amazing!! Made a double batch and all gone, even my 3yo loved it!
    Didnt love the chicken meatballs mostly because I dont really enjoy chicken meatballs but wondering if anyone has tried it with fish balls?
    Also wanting to know if anyone has tried omitting the brown sugar? Wanting to try a "clean" version 😊

    Omg! I’ve had this on my to do list for years! Finally. Wish I had made it before. It is divine. I used a lemon and pepper chicken breast as well as a regular one. Also didn’t use quite as much fish sauce in the balls because people said they could be sloppy. Then accidentally used 1tbsp in the broth. It was a bit salty but still so scrumptious. I don’t usually like Bok Choy but loved it in this. Thank you.

    we had this soup tonight.. i doubled everything as we looove asian soups... i did the meatballs in the varoma, and a few in the frying pan... i think it adds a bit more flavour that way... the noodles i cooked separately and just added at the end.... came out perfectly , and enough leftover for hubby's lunch tomorrow, great recipe, great flavours, thanks for posting

    Made this last night. I used two large chicken breasts as my hubby likes lots of meat and the recipe had to feed 4 of us. It made a LOT of meatballs so I halved the mix and added chillies to hubby's half. Also added breadcrumbs as suggested and cooked them in the both varoma trays. The meatballs took ages to cook, and I regret cooking the broth longer as the noodles broke up a bit too much. Next time I'll cook the broth for the recommended time then swap it out with boiling water to continue cooking the meatballs. I will also seal the meatballs in a pan first, as we weren't a fan of the steamed texture.

    The broth flavours were amazing though - loved it.

    Also will make more of the broth next time, as there was just too many meatballs compared to broth haha.

    I made his last night and it was fantastic. I’ve been to Vietnam twice and the flavour was true to the flavours you’d expect there.
    I used 500ml of chick stock and then made up the water to the total amount (as I used the chicken stock from the BCB).
    i did my meatballs in the Varoma but had to extend the cooking time a fair amount to make sure they were cooked. Next time I’d at the Varoma at step 5 - if not earlier.
    But the extra time did not affect the soup at all.
    Hubby loves it also, definitely going to become a regular in the house.

    Really great broth but my chicken balls fell apart in the basket. I have been making this soup with store bought frozen wontons/dim sims which is almost as tasty if you make sure you add coriander ets to the broth.

    Absolutely delicious, thanks for posting this recipe. I steamed the chicken balls in the varoma while the soup cooked. I found the mixture very soft so thought it would stick together in the basket. I didnt have any star anise so added a sprinkle of Chinese five spice, gave great flavour. I also added a small amount of shredded Chinese cabbage and some julienned carrot instead of Pak choy. My husband went back for seconds and said it was worth waiting for, late dinner tonight! Smile

    Ok, so this is amazing. I just made the best dish of my life and I havent even served it up yet. Was soo easy and even if the kids dont like the flavours, it will still end up being a regular in our household.

    Made this for myself and  my partner! Both of us were thoroughly satisfied and will definanlty be making it again. We added extra garlic as he is a garlic lover and there is never enough garlic in the things a cook for him.

    WOW!  I can't believe this came out of my kitchen.  I too doubled the recipe and cooked the (maybe 20 or so smallish) chook balls in the soup in a saucepan on stove top.  it was so delicious we had to have seconds.

    I too added chilli, garlic and fresh ginger to balls, as well as soup.

    I also used silverbeet instead of pak choy as we have a heap in the veggie patch and sprinkled chopped silver beet on top along with bean sprouts, chilli and coriander.  Looked and tasted like the real deal.

    NOTE to self; or anyone else interested.

    Chop garlic, chilli, ginger for balls first, before adding chook, coriander and spring onion.  Prep balls day before for flavour enhancement?

    Read noodle preparation and get onto that while prepping soup.

    Use gloves when rolling balls.  Despite sloppiness of balls, they hold together well, very tender and delicious.

    i used 270g chicken to make the chicken balls. Which made 7 large balls. 

    2 x star anise & 1 medium chilli in soup.

    using fresh ginger than the powered stuff gives it better flavour.

    will be making this dish All the time.

    We just had this for dinner, it was absolutely delicious. We used pork and veal mince, next time we will make it slightly Spicier. We had to cook the meatballs for an extra 4 minutes...

    Absolutely delicious! What a quick and easy family friendly recipe. I doubled the batch and cooked the meatballs in batches of 6 at a time (3 batches) and because the stock covered them, they cooked in about 6 mins. So yummy! Will definetly be on my family favourites list.

    My meatballs were still raw after tripling the second last step????  I even had slightly more liquid than the recipe said.  I don't get it??

    Also why does it have the varoma in the picture above as what you need to cook.  This wasn't in the instructions?

    I made this tonight with about 400 g of chicken and extended the cooking time by only a few minutes... I found that I had to increase the speed up to 3 to ensure all the meatballs were immersed in the broth to cook them and I did turn them over for the last 4 minutes as per the recipe.

    Delicious - I really liked the flavour (I only omitted chilli) but unfortunately my kids didn't.  I doubled the recipe except the coriander and did steps 6 & 7 in a pot on the stove as I didn't know if the meatballs would fit in the steaming basket.

    Sooooo good! Hubby gave it 10/10. I used half a bunch of corriander because a bunch seemed too much. Even then it was way too much so I upped the checken  another 100gms to try and counteract the amount of corriander. Becuase of this I had more meatballs that took a longer to cook ( I  did Step 6 for 8 minutes). Also only used 1 tspn stock concentrate as per other suggestions.

    But flavour was insane! Loved it.

    Delicious however I found the chicken balls a bit tasteless. The flavour of the soup itself was lovely and would be great if you come down with a cold or flu! My rice noodles also turned to mush, but that was my bad!
