Chicken & Broccoli Fettuccine
- 400 grams chicken breast or thigh, Chopped to your liking
- 3 Rashers of Bacon, Chopped to your liking
- 1 onion, Chopped into 4
- 3 cloves garlic peeled
- 100 grams mushrooms, Chopped to your liking
- 4 Florets of broccoli, Chopped to your liking
- 30 grams Butter, Chopped roughly
- 2 tablespoons Corn Flour, or thickening agent
- 100 grams cream, Any cream is ok
- 200 grams chicken stock
Fettuccine or spagetti of choice
- fettuccine pasta, We use the latino packets from woolworths but you can use what you like. Cook as per packet instructions on stove

Recipe's preparation
- Fill pot with water and boil on stove. Add pasta when ready as per instructions on the packet
1. Add onions and garlic to TM and chop for 2-3 seconds on speed 7
2. Scrape down sides of bowl with spatula and add bacon and butter to TM
3. Saute Onions, garlic, bacon and butter for 6 minutes, 100c, on speed 1
4. Add chicken, chicken stock, mushrooms and brocolli to TM and cook for 15 minutes, 100c, speed 1, Reverse
5. Fill MC with water and disolve corn flour
6. With 2 minutes left on the TM add dissolved corn flour through TM lid through the hole
7. Season and Stir through cream and let sit for 5 minutes
You can drain pasta and mix the pasta and sauce together or plate up with spagetti down the bottom and spoon the sauce over the top.

Left out the onion and only used 2 cloves of garlic.
I used chicken breast and it was way too dry after 15 minutes but the veg were cooked perfectly so I'll experiment with the chicken cooking time in the future.
I used half a small head of broc including the stem.
I didn't have chicken stock so I used a tbsp of veg stock paste and 200g water.
And I used 200g large shell pasta instead of 400g fettuccini.
Really delicious and easy, will definitely be making it again.

I made this today for dinner tonight but had some for lunch. Sooooo yummy!!!
Next time I won't add the corn flour till I mix the cream through as it went all gluggy (like glue) even though I did as per instructions.
I also found the broccoli got over smooshed so next time I will add it with about 10 minutes left on the timer.
i uSed ham instead of bacon and added a little salt and pepper at the end. Served with fresh Parmesan cheese 😍

This was the first recipe in my " new to me "thermie. I followed the notes from Leaps on 16. October 2016 - and although I used bacon I also added some red capsicum for a dash of colour. the brocolli was home grown from the freezer and by adding it only a few minutes before the end it stayed complete. the chicken thigh pieces stayed complete also..I never take a pic of my food but this lookedso amazing on the white plate I took a photo! . pasta served first with sauce over. 2 good size servings with some over for another meal. thanks for the initial recipe.. Hubby was happy with it also.

Really happy with this. Very tasty without being overpowering for the kids and chicken stayed chunky. Read through comments and used "Gentle stir setting" , a heaped tsp of thermo chicken stock concentrate, 100mls of water, 20g of parmasan and only cooked broc for 5 mins. Would use even less water next time.

Yummy chicken & broccoli fettuccine - Yum! The chicken was lovely and tender and the broccoli remained intact. I used chicken thigh fillets and substituted frozen peas for the mushrooms, and TM veg stock and 200g of water for the chicken stock. The sauce was a nice consistency that thickened over time. We served ours with fresh parmasen cheese. A very tasty dish! Thanks for sharing!
Update: I've been making this regularly, but last night I nailed it. I used chicken thigh fillets, 1 heaped teaspoon of Quirky Cooking chicken stock paste and 200g water, mixed on speed soft, added broccoli and 200g frozen peas with 10 minutes to go on the timer at step 4, added the two tablespoons of cornflour mixed with a full MC of cold water with 2 minutes to go, and finally added the cream and stirred through using speed soft at step 7. I didn't use bacon. Perfect! Thank you!

good recipe, but wish I had read some of the comments and suggestions first. the chicken was fine, but the broccoli completely disintegrated, so will add much later or steam next time. Otherwise, a really easy and quick mid-week family meal. Thanks.

Hmm... As others have suggested, next time I will:
- use 2 tablespoons of TM stock and only 100 mls of water
- mix using "Gentle stir setting" reverse (speed 1 shredded my chicken)
- add broccoli at end with 3 tablespoons if corn flour instead of 2
I won't be serving this recipe up when friends are over, but it's a good, healthy, mid-week dinner.

Nice sauce. I only added 100ml water and 1tbsp TM veggie stock and added enough cream at the end until it was a nice sauce, probably about 150ml. Didn't find it too runny at all using this method.
I also added additional corn flour as the others suggested, probably 3 tbsp in total.
I cut my chicken fairly small and only cooked for 10, not 15 minutes and it was fine. Was a little shredded but not too much. I added the brocoli right at the end, when the corn flour was added and it stayed whole and was still crunchy, how we like it. Cooked on "Gentle stir setting" reverse as others suggested.
Kids gobbled this up, so I'll be making this again. Yummy with fresh grated Parmesan.

having read all the comments before cooking, I steamed my chicken, broccoli with some cashew nuts. I used natural yoghurt instead of cream. Found the stock too much - a bit on salty side. Would make it again with less stock.

Was a hit in my house but I steamed broccoli in Verona whilst cooking as I didn't want it too soft.
I found that even though I
I found that even though I followed the recipe to a tee, my chicken (that I had cubed extra chunky in anticipation of shreddage) ended up shredded.
Also I found it very liquidy, even with the cornflour. I ended up adding a further 2 tablespoons cornfour to thicken it up. I also added some TM Vege Stock paste to add some extra flavour.
Quick and easy and it tasted OK in the end as we made it into a pasta bake with cheese crumbled over the top.

We made this with Broccolini, Baby Spinach and curly pasta. It was delicious! My toddler gobbled it up and will now also enjoy lots of little portions of leftovers which have been individually frozen for her!

Flavour was great but the
Flavour was great but the picture did not reflect what mine turned out like - I had more of a broccoli and mushroom soup look as the mixing basically broke down both components into puree during the 15 mins cooking time. I had hoped I could cook it and pick out the broccoli for my son, but due to the end texture I couldn't, so he had plain pasta with butter which was a shame (he doesn't like broccoli).
Suggestions:
- what is a floret ? specify a weight of broccoli instead
- what is "chopped to your liking"? I did this and as above, it all got squished to nothing, if it needs to be finely chopped before adding, please specify.

Few modifications
100g water
200g cream
3 x tblsp cornflour (added half at the beggining, the other half at the end)
2 x tblsp stock
200 grams mushrooms
I think I added extra shortcut bacon - prob about half a dozen slices
Cooked on reverse "Gentle stir setting"
Steamed the broccoli but added in with the mix at the beggining frozen mixed veg (corn, carrots and peas) and stirred through a couple of handfuls of baby spinach at the end.
I think this would make an awesome winter warmer soup with a handful of thin noodles. This will be a regular. Thanks for sharing!
