Apple & Blueberry Pancakes

Ingredients

10 portion(s)

Apple & Blueberry Pancakes

  • 1 small green apple, quartered
  • 200 g SR Flour White or Wholemeal, or buckwheat flour
  • 1 teaspoon cinnamon ground
  • 250 g Milk, or buttermilk
  • 1 egg
  • pinch nutmeg ground
  • 1 heaped tablespoon honey
  • 100 g blueberries, fresh or frozen

Recipe's preparation

    Apple & Blueberry Pancakes
  1. Place apple into TM Bowl for 2 secs on speed 6, scrape down sides of bowl.

    Add remaining ingredients (except blueberries) & mix for 5 secs on speed 5. Add blueberries & mix on reverse for 1 sec on speed 3.

    Cook in a medium/hot fry pan with a little butter, until golden and springy to the touch.

    Serve with your favourite fruit and syrup & some homemade yoghurt.

Mill your cinnamon & nutmeg fresh for an even more delicious result.

Gluten free option mill almonds & buckwheat to use in place of flour.

    These were fantastic.  Mine weren't too thick at all and cooked easily.  I used Frozen blue berries so i wonder if this adds more liquid.  Served it with Maple syrup and whipped cream - Yumm!!!

    Made these this morning for hubby and kids. Wanted to mix up the usual breakfast with a treat and this was a much healthier way to do it! i did add just a sprinkle of baking powder to the mix though as mine are fussy about wanting very fluffy pancakes! 

    Served with homemade natural yoghurt and home made berry coulis topped with bannana! YUM!! thanks!

    We loved these pancakes! Made with 100gms GF SR flour and 100 gms buckwheat flour. Also substituted the honey for 2 tablespoons of rice malt syrup. So yummy, thank you!

    Very nice! It made 4 thermoserver-sized pancakes which was plenty to fill up my husband and I. I only had a red apple on hand so I used that, and I added a heaped half tsp to plain wholemeal flour to help the pancakes rise. Not overly sweet!

    These were ok, but I found them a little dense. Milled my own buckwheat for the flour. I should have read the comments first, next time I'll try with 100g buckwheat and 100g SR flour, to give them a bit of lift.

    Very yum!  I had a soaked and dehydrated mix of buckwheat and flaxseeds so I milled 190g of that before adding the apple.  Added 1tsp of cinnamon (I always add more cinnamon because its a great blood sugar balancer and cholesterol lowerer tmrc_emoticons.) ) When I added the blueberries I noticed a large lonely browning banana so chopped that up and added as well. Delicious with plain yoghurt, tried a little maple syrup but it really didn't need it.  Thanks for posting!!!
