Awesome Pad Thai

Ingredients

5 portion(s)

main

  • 1 brown onion, approx 100gms
  • 2 cloves garlic
  • 1 --- chilli, 1-2 according to taste
  • 2 Eggs., medium-large
  • 1 litre water
  • 20 grams water, additional
  • 500 grams chicken thighs diced into 2cm pieces, Replace with TORFU for Vegetarian
  • 35 grams peanut oil/other vege oil
  • 10 grams Coriander (fresh)
  • 250 grams bean sprouts, fresh
  • 200 grams Rice noodles, Wide/thick
  • 80 grams peanuts, dry-roasted, Can leave these whole or crush if preferred on Speed 5/ 4 seconds.

Sauce Ingredients

  • 40 grams tomato sauce/ketchup
  • 40 grams soy sauce
  • 50 grams fish sauce
  • 50 grams oyster sauce
  • 150 grams Chilli Sauce (Hot or Sweet)
  • 80 grams Brown Sugar.

Recipe's preparation

    Method:
  1. * Add diced Chicken pieces to Varoma Dish, then on the Varoma tray place wet scrunched baking paper.

    * Whisk eggs with 20gms of water, then place on Varoma tray. (This step is optional - can cook eggs on stove top if preferred).

    * Add the 1litre of water to Closed lid.

    * Place the Varoma on the Closed lid, and cook 10 mins/ Varoma Temp/ Speed 4. Once the omlette is cooked, either stovetop or Varoma method, roll the omlette into a tight roll, then dice in thin strips, then put aside & keep warm.

    *replace the Varoma Dish (with the chicken in it)back on top of the Closed lid
    You will need to continue to cook the chicken for another 10-12 minutes or so. Check that the chicken is cooked & keep warm with egg.

    * Place the Pad Thai Rice noodles into boiling water in a Thermo-server, soak until cooked. (OR follow instructions on side of packet for cooking instructions).

    *Once noodles are cooked, drain excess water from Thermo-server & add chicken & egg to keep all warm.

    * Empty water from Closed lid then dry Closed lid. Add onion, garlic, coriander and chilli, on to running blades- mix Speed 5/ 4 seconds. Scrape down sides, then add oil to Closed lid without MC and saute 2minutes /Temp 90C/ Speed 2.

    * Combine the sauce ingredients into Closed lid and mix Speed 3/ 5 seconds.

    * Add to rest of ingredients along with the bean sprouts in the thermo-server.

    * Serve with peanuts over the top, along with extra coriander or parsley if preferred. ENJOY!
  2. Vegetarian Option.

    Omit the chicken and add diced Torfu, into the thermo-server with the rice noodles.

    Very nice!

    Just did the sauce in the thermo and the rest in a pan. Didn't have any chilli sauce so left it out and just added about 15g oyster sauce extra. Husband found it a bit too sweet so might put slightly less sugar next time.

    Delicious! I travel to Thailand frequently and this recipe is pretty spot on. I did cook the egg in a wok and also finished the chicken off this way. Will definitely be a favourite in this house.

    This was very yummy! I did just the sauce in the thermomix and cooked the rest on the stove. It was very yummy even without the mung beans (I didn't have any). Next time I'm going to try adding some peanut butter to the sauce and garnish with spring onion!

    Kyliepearson: You have to wet some baking paper and put it on the tray first. But I found it better to just make the omlette bit in the pan. Actually even the chicken in a pan. Just cook the sauce in the Thermomix

    Best Thai recipe I've tried yet! The timing wasn't quite right and my omlette didn't cook. I ended up cooking it in the pan. Also finished off the chicken in a pan. I would definitely add some brocoli and carrots next time as well. Everyone in the family enjoyed it and I'll definitely make it again! Other than that, really tasty dish! Thanks for sharing.

    Loved this dish . Will be definitely on the repeat list . My only concern was by the time it came to serve , the meal was on the cool side despite following recipe and using my thermo server . so a few seconds in micro wave solved that issue

    Had Pad Thai last night at a really expensive and flash Thai restaurant - it was bland. Made this Pad Thai tonight it ran rings around the restaurant one - will be made regularly from now on. Made it exactly as the recipe said and it was perfect for us.

    Love this Pad Thai, tried many recipes and this is by far the best. I cooked my chicken in the wok and the noodles soaked in a jug. Made the sauce in the Thermo so quick and easy I did omitt the tomato sauce and replaced it with tamarind puree also. I like to put snow peas and carrots in.

    Awesome Pad Thai - Very tasty Pad Thai! I use this recipe as more of a guide as we split the cooking elements up between the wok & the Thermomix. I do the omelette & the sauce in the Thermomix (the sauce is delicious!), the noodles in a glass bowl covered with boiling water until they are slightly underdone, & the garlic, onion, chicken (tenderloins or breast) & vege (we use frozen broccoli, julienned carrots, baby corn, snow peas & bean sprouts) in the wok. We then add the noodles & sauce to the wok to finish it off. We also serve in the wok at the table (it makes a huge amount) with fresh coriander & whole dry roasted peanuts- yum! I omit the chilli for my 11yo, but have chilli on the table for those who want it. Also, from previous experience, I have found that the sugar is important for the sauce, I omitted it the first time I made it & it was way too spicy for my 11yo, the sugar is definitely important for balancing the sauce! Five stars! Thanks for sharing!

    Very tasty dish and will use again. However as my husband does not like things hot, I left the chilli out of the main and only used 80gms of sweet chilli in the sauce. Still very tasty with just a little bit of heat.

    Enjoyed making this, however my husband refuses to eat coriander so had to make it without. For a bit of greenery and extra crunch I added snow peas when I added the bean sprouts. My first time cooking omelette in the varoma and glad to have tried that, will use that one again. Thank you

    This is AMAZING!! Pad Thai is my favourite Thai dish so I was sceptical! I used half chilli & garlic sauce, half sweet chilli sauce and reduced the brown sugar to 25gms. I also used chicken breast as that was what I had in the fridge, 1/4 tsp coriander powder. The meal came together super quickly. Make this recipe, it is delicious!

    Made this tonight and loved it. My 2 year old gobbled it all up... was a Little sweet so might use hot chilli sauce instead of sweet next time but was still beautiful. Cooked the egg on the stove as I ran out of baking paper though. Def one to add to the dinner list.
