Banana, oat and spelt pancakes

Ingredients

12 portion(s)

  • 2 ripe bananas, quartered
  • 10 g coconut oil (liquefied)
  • 1 tbsp golden flaxseeds (linseeds)
  • 140 g whole oats
  • 120 g wholemeal spelt flour
  • 1 pinch salt
  • 40-50 g Raw caster sugar
  • half tsp bicarb soda
  • 1 tsp baking powder
  • 1 large egg
  • 2 MC of low-fat natural or vanilla yoghurt
  • 2 MC of skim milk
  • 2 tsp Vanilla bean paste or extract
  • sliced fresh fruit of choice, (e.g. kiwi, blueberries, strawberries)

Recipe's preparation

  1. Add flaxseeds and oats to the TM bowl and mill for 20 seconds on speed 9 with the MC lid on. Decant into a bowl and put aside.

  2. Place rip bananas in TM bowl and mash for a few seconds on speed 4. Return the ground flax and oats to the bowl and add all remaining ingredients. Mix for 20 seconds on speed 5 until smooth. 

  3. Heat a large non-stick frypan on medium heat and grease with a little coconut oil or butter. Pour about 2 tablespoons at a time onto the hot pan. Sprinkle a few blueberries or add thinly sliced fruit on top of each pancake as it cooks. Cook for about 2 minutes on each side or until bubbles begin to form, turn over and cook the other side. Turn the heat to low as the pan heats up.

  4. To serve, sprinkle with a little sieved icing sugar or drizzled with honey or syrup. Also delicious with a smear of TM lemon butter! Enjoy.

Tip

These pancakes (or pikelets) are low in fat and high in dietary fibre. They are suprisingly light and fluffy considering they are made from wholegrain flour. One quantity makes enough for breakfast over two days. The left-over mixture can be kept in the fridge. Just add a little extra milk before cooking up the next day!

Variations

Use a plant-based milk and soy yoghurt to make these pancakes dairy-free. If whole spelt is readily available, why not grind your own?

    These pancakes are delicious! I wanted healthier pancakes for my kids as they love them, these were a hit! I left out the sugar, I found they didn't need it at all. Will definitely be making again. Great as snacks to take out for the kids as well. Thanks for the recipe!

    Yummo, light and fluffy and kids loved. Didn't have yogurt so just used 3 MC's of milk, left out sugar, were sweet enough. New fave pancake recipe tmrc_emoticons.)

    Very yummy and fluffy, will definitely be making this one again. i didn't have flax seeds, baking powder or yogurt so just added a tea spoon of baking soda and 4mc of milk and they worked out fine. Will try with all the recommended ingredients next time.

    Delicious! I made a few variations; no banana or yoghurt so just used 3.5 mc's of oat milk, poured straight into a baking tray, topped with sliced apple and cinnamon, baked for 20mins on 180c...yum

    Amazing! I have been having trouble finding something for the kids to eat that is more nutrient dense than porridge.. these are definitely being added to the brekky roster! I avoid any processed sugar so substituted the sugar for 40gm of rice malt syrup, they were almost too sweet. Next time I make them I will leave out the sugar all together..I think they will be sweet enough from the bananas alone.

    Very filling and yummy! I used rice milk I had made earlier and added sliced apples to the batter on the frying pan. It was a hit! Definitely keeping this recipe!

  • Made these for Father's Day

    Made these for Father's Day breakky - they were a big hit! I prefer fresh fruit on top, so instead of adding while cooking, I put cut up strawberries and kiwi fruits on top to serve. The batter was nice and thick, so the pancakes are easy to manage and flip without drips on the frying pan.

    Thank you for this delicious recipe. My kids can't get enough of them! I use 20g of rapadura instead of raw sugar and serve fruit on the side with maple syrup rather than cooked in the pikelet. So yummy!!

  • I thought my pancake recipe

    I thought my pancake recipe was the best ever until I tried these but these are great.  I made them into pikelets and took them to functions twice and they went really quickly.  I make up the whole batch and freeze the leftovers and they freeze really well.  Thanks for the recipe.
